Ingredients:
- 1 medium cauliflower head, crumbled
- ¼ cup Almond flour/meal
- 1 tablespoon Coconut flour
- ½ teaspoon Garlic powder
- ½ teaspoon Salt
- 3 Eggs. whisked
- 4 tablespoon Everything bagel spice
- ½ teaspoon for Poppy seeds for topping
- ½ teaspoon Chilli flakes
- ½ teaspoon for Sesame seeds for topping
Instructions:
- Preheat the oven at 200˚C or 400˚F for 15 minutes. Prepare the baking sheet by lightly brushing with oil and placing parchment paper on it.
- Take one medium crumbled or riced cauliflower head and add ¼ cup almond flour/meal to it. Mix them.
- Now, add 1 tablespoon of coconut flour, ½ teaspoon of garlic powder, and ½ teaspoon of salt to the above mixture. You can adjust the taste of salt according to your liking. Coconut flour is optional, but it adds to the flavor.
- Whisk 3 eggs in a large bowl, and gently pour into the above cauliflower mixture. Eggs help in the baking and give crisp to cauliflower rolls.
- In a separate bowl, mix 4 tablespoons of Everything bagel spice, ½ teaspoon of poppy seeds.
- Also, add ½ teaspoon of chili flakes and ½ teaspoon of sesame seeds. Mix the everything bagel topping thoroughly. You can add any other spice of your liking, too.
- Divide the cauliflower mixture into equal portions.
- Make small balls of the cauliflower mixture and place them on parchment paper.
- Give the balls a rough look of rolls. Load them with the everything bagel topping just prepared.
- Bake them in the oven for 30 minutes, until they are crisp and golden.
- Take them out of the oven and let them rest in the open air for 10 to 20 minutes to cool down and become crispier.
