Plums are extremely nutritious, packed with vitamins, minerals, fibre and antioxidants and offer a wide range of health benefits. They help reduce the risk of several chronic diseases. Moving on, in addition to the many vitamins and minerals packed into these breakfast muffins, quinoa also gives them a major protein boost.
In this recipe, you will find simple steps on preparing spiced plum and quinoa muffins.
PREPARATION TIME;
This recipe is a very quick one. All you need is a 10 minute preparation time and 15-20 minutes cooking time just right for breakfast.
INGREDIENTS;

2. | Buckwheat flour | 1 cup |
3. | Full-fat plain yoghurt | 1cup |
4. | Honey | ½ cup and a little bit more for drizzling |
5. | Raw white quinoa | 1/3 cup |
6. | Melted unsalted butter | 113g |
7. | Eggs | 2 large |
8. | Baking powder | 1 ½ tablespoon |
9. | Ground cinnamon | 1 tablespoon |
10. | Roughly chopped and thinly sliced plums | 1 each |
11. | Baking soda | ½ tablespoon |
12. | Ground ginger | ½ tablespoon |
13. | Salt | ½ tablespoon |
DIRECTIONS;
Step 1:
Preheat your oven to 200C (400F or gas mark 6). Take a muffin pan and line it with paper cases. Use preferably and 12 hole muffin pan.
Step 2:
Take a large mixing bowl and whisk in the plain and buckwheat flours, quinoa, baking powder, cinnamon, ginger, baking soda, and salt together.
Step 3:
Take another medium-sized mixing bowl. Whisk in the eggs, yoghurt, melted butter, and honey together.
Take this mixture and gently fol it into the flour mixture prepared in step 2. Mix until it is well combined and stir in your chopped plum.
