For the Aloo Tikki

For the Hari Chutney

DIRECTIONS
Step 1.
Bring the potatoes to boil in a large pot for about 15-20 minutes until they become soft and tender. Drain them and set aside for cooling.
Step 2.
While the potatoes are cooling, prepare the chutney. Using a food processor or a spice grinder, combine all the ingredients for the chutney and blend well until it becomes well pureed. Add a tablespoon of water if it is too thick to encourage blending. You can also add more salt, pepper, seasoning or lime as per your taste.
Step 3.
Take the cooled potatoes in a large mixing bowl and add the vegan butter and spices. Mash to combine the ingredients but try not to overmix. Add more salt or pepper if you desire. Add in the peas and mix lightly once more.
Step 4.
Now, scoop ¼ cup measurements of the potato mixture and form round disks. As per the measurements, you should get 8-10 potato cakes. Season the cakes with a pinch of salt, pepper and curry powder. Sprinkle the panko bread on top and press gently for it to adhere.
Step 5.
Heat a skillet over medium heat. Once it is hot enough, coat it with the vegan butter. Place 3-4 patties with the spice side down as per the size of the skillet. Again, sprinkle the top with salt, pepper, curry powder and panko bread crumbs and press gently.
Step 6.
Let it brown for about 3-4 minutes and gently flip them. Cook until they turn into a deep golden brown. Repeat this with all the Tikkis adding more vegan butter or oil as needed.
Step 7.
Plate them wit the chutney in a small bowl on the side. Your delicious Aloo Tikki with Hari Chutney are ready to be eaten.
