Preheat the oven at 200˚C or 400˚F for 15 minutes. Prepare the baking sheet by lightly brushing with oil and placing parchment paper on it.
Take one medium crumbled or riced cauliflower head and add ¼ cup almond flour/meal to it. Mix them.
Now, add 1 tablespoon of coconut flour, ½ teaspoon of garlic powder, and ½ teaspoon of salt to the above mixture. You can adjust the taste of salt according to your liking. Coconut flour is optional, but it adds to the flavor.
Whisk 3 eggs in a large bowl, and gently pour into the above cauliflower mixture. Eggs help in the baking and give crisp to cauliflower rolls.
In a separate bowl, mix 4 tablespoons of Everything bagel spice, ½ teaspoon of poppy seeds.
Also, add ½ teaspoon of chili flakes and ½ teaspoon of sesame seeds. Mix the everything bagel topping thoroughly. You can add any other spice of your liking, too.
Divide the cauliflower mixture into equal portions.
Make small balls of the cauliflower mixture and place them on parchment paper.
Give the balls a rough look of rolls. Load them with the everything bagel topping just prepared.
Bake them in the oven for 30 minutes, until they are crisp and golden.
Take them out of the oven and let them rest in the open air for 10 to 20 minutes to cool down and become crispier.
