8 oz. crumbled goat cheese (about 1 cup), at room temperature
1/2 c. ricotta cheese
2 scallions, finely chopped
1/4 c. fresh flat-leaf parsley, chopped, plus more for serving
2 tsp. lemon zest
2 tbsp. lemon juice
Kosher salt and freshly ground black pepper
Olive oil, for drizzling
Grissini or breadsticks, for serving
- Process goat cheese and ricotta in a food processor until smooth, 1 to 2 minutes. Transfer to a bowl and fold in scallions, parsley, lemon zest, and lemon juice. Season with salt and pepper.
- Top with parsley and drizzle with oil before serving. Serve with grissini or breadsticks alongside.
