Lamb spezzatino

Ingredients:

  • 3 sprigs fresh rosemary (approx. 10 cm long), leaves only
  • 3 sprigs fresh thyme, leaves only
  • 1 sprig fresh sage, leaves only
  • 1 brown onion (approx. 150 g), cut into halves
  • 2 garlic cloves
  • 20 g olive oil
  • 70 g rindless bacon rasher, cut into cubes (3 cm)
  • 750 g lamb neck fillet, cut into pieces, seasoned with 1/4 tsp salt and 1/2 tsp ground black pepper
  • 2 carrots, cut into slices (1-2 cm)
  • 2 celery stalks, cut into slices (1-2 cm)
  • 2 tbsp Meat stock paste, or Vegetable stock paste (see Tips)
  • 400 g canned chopped tomatoes
  • 200 g dry white wine
  • 100 g water
