Beetroot Pasta

Beetroot pasta area wonderful and unique way to prepare pasta. With valentine’s day just around the corner, beetroot pasta gives a unique colour.
With flavour (and consistency) of this sauce that is similar to a fettuccine alfredo with an earthy undertone and a pretty pink colour, It is perfect as a meatless meal or great topped with chicken or shrimp!
In this recipe, you will learn how to prepare beetroot pasta in easy steps.

PREPARATION TIME
This recipe is very easy to follow with a preparation time of fewer than 15 minutes and around an hour of cooking time. You will yield 6 servings but feel free to change the quantities as per need.

INGREDIENTS

DIRECTIONS

Cook Beets

Step 1
Preheat oven to 375°F.

Step 2.
Rinse beets. Trim the top and bottom and cute them in halves. Toss them with some salt and pepper.

Step 3.
Line a baking dish with parchment paper and place the seasoned beets.
Roast until the beets are tender and cool.

Step 4.
Rub the skin off of the beets using gloves. Chop them into small cube and set aside.

Sauce

Step 1.
Cook the onion and garlic in butter in a medium-sized saucepan until they are tender.

Step 2
Add cooked onion mixture, about 2 ½ cups of chopped beets and your vegetable or chicken broth to a blender. Process until it becomes very smooth. This would give you about 1 ¼ cups of puree.

Step 3.
Pour the beet puree into a saucepan and slowly whisk in the heavy cream. Add in thyme and cayenne pepper and mix well. Bring this to a simmer and cook until thickened, about 5 minutes. Once thickened, turn the heat off and stir in cheese.

Step 4.
Meanwhile, cook pasta al dente in salted water according to package directions. Drain the pasta but keep 1 cup of the pasta water aside.

Step 5.
Add in your sauce and if needed, you can add a little of your pasta water. Your delicious beetroot pasta is ready to be enjoyed.
