Herbed Goat Cheese Dip


8 oz. crumbled goat cheese (about 1 cup), at room temperature
1/2 c. ricotta cheese
2 scallions, finely chopped
1/4 c. fresh flat-leaf parsley, chopped, plus more for serving
2 tsp. lemon zest
2 tbsp. lemon juice
Kosher salt and freshly ground black pepper
Olive oil, for drizzling
Grissini or breadsticks, for serving


  1. Process goat cheese and ricotta in a food processor until smooth, 1 to 2 minutes. Transfer to a bowl and fold in scallions, parsley, lemon zest, and lemon juice. Season with salt and pepper. 
  2. Top with parsley and drizzle with oil before serving. Serve with grissini or breadsticks alongside.
