Sausage and goat cheese bake

DIRECTIONS

Step 1.
Preheat the oven to 325 degrees F. Meanwhile, grease a 9-inch deep-dish pie plate with butter.

Step 2.
In a large skillet, heat the butter over medium heat. Add the sausage to the butter and cook. While cooking, break apart the sausage with a wooden spoon. Cook until it is thoroughly cooked and fully brown for about 10 minutes. Once cooked, shift the sausage to a tray lined with a paper towel and set aside.

Step 3.
In the same pan, add the shallots and cook until they are soft for about 2 minutes. Add the spinach, 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook until the water has evaporated and the spinach is tender for about 5 to 7 minutes. After that, add in the sun-dried tomatoes and cook until it is heated.

Step 4.
In the pie plate prepared in the first step, add in the sausage and the cooked spinach mixture.

Step 5.
Beat the eggs, milk, salt, and pepper in a medium-sized bowl until they become frothy. Pour this mixture over the spinach and sausage on the pie plate. Place the goat cheese on top with the circular piece in the centre and the oblong pieced around it. Add in the additional sundried tomatoes on top.

Step 6.
Bake for about 30 minutes until it is set. Your delicious protein-packed breakfast is ready.
