For the salad;

1.Kosher saltAs per taste
2.Broccoli3 heads cut into bite size pieces
3.Shredded cheddar½ cup
4.Thinly slices red onion¼ cup
5.Toasted sliced almonds¼ cup
6.Cooked and crumbled bacon3 slices
7.Freshly chopped chives2 tablespoons

For the dressing;

1.Mayonnaise2/3 cups
2.Apple cider vinegar3 tablespoons
3.Dijon Mustard1 tablespoon
4.Kosher saltAs per taste
5.Freshly ground black pepperAs per taste


Preparing the salad;

Step 1.

 Bring 6 cups of salt water to boil in a medium-sized pot or a saucepan. When the water starts to boil, add your broccoli in and cook for about 1 o2 to minutes until your broccoli is tender but not overcooked.

Step 2.

 While the water for the broccoli is boiling, prepare a large bowl of ice water. When the broccoli is cooked, remove it with a slotted spoon and place the broccoli in the ice water and let it cool for a few minutes.

Preparing the dressing;

Step 1.

 In a medium bowl add the mayonnaise, Dijon mustard, and apple cider vinegar. Add salt and black pepper as per your taste and whisk the mixture well.

 Your dressing is ready.

Finally, in a large bowl, add your broccoli, shredded cheddar, onion, bacon, toasted almonds, and chives. Pour on the dressing and toss your salad gently until the ingredients are fully coated with the dressing.

 Your keto broccoli salad is ready to be served. It can also be refrigerated as a pre-meal.
