DIRECTIONS
Step 1.
Preheat the oven to 400 degrees F. Take a baking sheet and line it with a baking sheet or parchment paper.
Step 2.
Using a small knife, peel the tangerine, grapefruit and orange. Remove the pith and slice them into segments removing the seeds. Place them in a bowl, drizzle with olive oil and season with salt and pepper. Cover the bowl and refrigerate until it is ready to serve.
Step 3.
Take a food processor and pulse the pistachios and garlic salt until the mixture has somewhat of a granulated consistency. Transfer this mixture into a shallow dish.
Step 4.
Now, to prepare the fish, season both sides of the fish fillets with salt and pepper. Using a pastry brush, coat the top side of each piece of fish with Dijon mustard.
Take the pistachio mix and gently press it onto the mustard covered side. Finally, transfer the fillets to the prepared baking sheet with the pistachio side facing upwards.
