Salmon in Puff Pastry

8.Thawed frozen spinach8 ounces (Comes in 1 packet)
9.2 sheets of thawed frozen puff pastry1 package
10.Lightly beaten egg with 1 tablespoon of water1 egg
11.Mayonnaise1 cup
12.Dill1 teaspoon

DIRECTIONS

Step 1.
Preheat the oven to 400°F. Line a large baking sheet with parchment paper.

Step 2.
Mix your mayonnaise, dill, 2 tablespoons of lemon juice, and half of the lemon zest in a small bowl. Let the mixture chill in the fridge until it is ready to be served on the side.

Step 3.
Cut the salmon fillet in half. Tuck in the tail/narrow ends to make the pieces look even-sized. Sprinkle salt and pepper on each piece.

Step 4.
Microwave the thawed spinach until it is slightly warm. With the help of paper towels, wrap them around and squeeze out the water from the spinach.

Step 5.
In a small bowl, mix the cream cheese, thawed spinach, butter, the remaining half of the lemon zest, and 1 tablespoon of lemon juice.

Step 6.
Roll out the puff pastry and place it on the parchment paper.

Step 7.
Place one piece of the salmon fillet in the center of the dough. Spread the cream cheese and spinach mixture on the top and place the second piece of salmon fillet over it.

Step 8.
Roll out the second sheet of puff pastry and place it over the salmon loaf. Moisten the edges of the puff pastry and close the bottom pastry with the top one. Crimp the edges to seal the loaf.

Step 9.
Brush the loaf with egg wash and bake the lot for around 25 to 30 minutes until the pastry turns golden brown and the salmon is thoroughly cooked.

Step 10.
Take out and serve immediately with the refrigerated dill sauce.
