Toasted muesli

Ingredients :

  • 200g rolled oats 
  • 30g wheatgerm 
  • 100g bran or rye flakes 
  • 2tsp vanilla extract
  • 30g hazelnuts, chopped 
  • 30g flaked almonds 
  • 75g sultanas 
  • 75g dried apricots, chopped
  • 75g dried figs, chopped

Method :

  1. Heat the oven to 160°C/fan 140°C/gas 3. Line a large baking tray with baking paper.
  2. Put the oats, wheatgerm and bran or rye flakes in the prepared tray. Toss with the vanilla extract, then toast for 5 min. Remove from the oven, toss well, then toast for 5 min more. Set aside until cooled completely.
  3. Pour the mixture into a large bowl, then stir in the nuts and dried fruits. Store in an airtight jar for up to one month.
