Butternut Squash Latte

Ingredients

  • 6 oz. whole milk
  • 1 cardamom pod
  • 2 Tbsp. store-bought butternut squash puree
  • 1 Tbsp. light brown sugar
  • 1 tsp. allspice berries
  • 1 1/2 oz. freshly brewed espresso or 2 oz. freshly brewed coffee
  • A pinch of kosher salt
  • 1/8 tsp. ground turmeric
  • Cinnamon stick, for garnish

Directions

Step1

In a medium pot over medium heat, bring milk, cardamom, squash, brown sugar, and allspice to a simmer. Remove from heat and let sit for 5 minutes, then strain through a fine-mesh sieve into a small bowl; discard solids.

Step2

Using a frother or small whisk, vigorously mix until frothy, if desired.

Step3

Pour espresso into a mug. Stir in salt. Top with foamed milk, then sprinkle with turmeric. Garnish with cinnamon stick.
