Strawberry Boba Tea

This Strawberry Boba Tea with Cheese Foam recipe is a refreshing, creamy drink that combines fruity green tea, chewy tapioca pearls, and a rich layer of cheese foam on top. Created by Alyssa Wang, this recipe blends two popular Taiwanese beverage trends into one fun and flavorful treat.

Bubble tea originated in 1980s Taiwan, when tea shop owner Liu Han-Chieh added tapioca pearls to his drinks, creating an instant hit. Cheese tea followed in the 2010s, quickly rising to global popularity thanks to its unique savory-sweet cheese foam and social media buzz. This recipe brings both together in one vibrant, indulgent cup.

Ingredients:

Cheese Foam Ingredients

1/2 cup cream cheese

2 tablespoons sugar

1 teaspoon salt

1/4 cup milk

12 cups heavy whipping cream

Boba Tea Ingredients

1/2 cup strawberries, diced

1 cup green tea

1/2 cup ice cubesBoba pearls, for garnish

Directions:

Cheese Foam Prep

Step 1

Combine cream cheese, 1-2 tablespoons sugar (to taste), and salt; whisk together. Add milk and stir until fully combined. (If using block cream cheese, as opposed to whipped, this helps loosen it and incorporate it smoothly.)

Step 2

In a separate bowl, whip the heavy whipping cream until medium peaks form.

Assembling The Boba Tea

Step 1

Add whipped cream to the cream cheese mixture and combine. It should be a thick but pourable consistency. If it’s too thick, gradually mix in milk (1 tablespoon at a time) until it reaches the desired foamy consistency.

Step 2

Start making your drink by muddling together strawberries and 1 tablespoon of sugar (to taste) in a cup.

Step 3

Add your toppings, ice, and green tea. Stir to incorporate the strawberries with the green tea.

Step 4

Top it off with the cheese foam as desired and garnish with boba pearls.
