Corned Beef Omelet

Ingredients:

  • 12 ounces corned beef
  • 3 pieces eggs
  • 1 piece onion
  • 4 cloves garlic
  • 3/4 cup green onion chopped
  • 3 tablespoons Cooking oil
  • Salt and ground black pepper to taste

Instructions

  • Prepare the corned beef by sautéing. Heat oil in a pan and then saute garlic and onion. Add corned beef. Continue to saute for 3 to 5 minutes. Remove from the pan and let it cool down.
  • Crack the eggs and place in a large mixing bowl. Add the salt and pepper.. Beat until all the ingredients are well incorporated.
  • Add sautéed Corned beef and green onions. Stir to mix the ingredients. Note: Make sure that the corned beef has cooled down before you execute this step.
  • Heat a frying pan. Add 1 tablespoon cooking oil or use a cooking oil spray and spray oil on the pan.
  • Scoop around ½ to ¾ cups of the corned beef and egg mixture and pour in the pan. Cook for 3 minutes on medium heat.
  • Use a spatula to flip the omelet and cook the other side for 2 to 3 minutes.
  • Transfer to a serving plate. Serve.

Easy Mongolian Beef

Mongolian Beef that’s easy to make in just 30 minutes, crispy, sweet and full of garlic and ginger flavors you love from your favorite Chinese restaurant.

Ingredients:

  • 1 pound flank steak
  • 1/4 cup cornstarch
  • 1/4 cup canola oil
  • 2 teaspoons fresh ginger , minced
  • 1 tablespoon garlic , minced
  • 1/3 cup lite soy sauce , low sodium
  • 1/3 cup water
  • 1/2 cup dark brown sugar
  • 4 stalks scallions , green parts only, cut into 2 inch pieces

Instructions :

Note: click on times in the instructions to start a kitchen timer while cooking.

  1. Slice the flank steak against the grain (the grain is the length of the steak) the long way 1/4 inch think pieces and add it to a ziploc bag with the cornstarch.
  2. Press the steak around in the bag making sure each piece is fully coated with cornstarch and leave it to sit.
  3. Add the canola oil to a large frying pan and heat on medium high heat.
  4. Add the steak, shaking off any excess corn starch, to the pan in a single layer and cook on each side for 1 minute.
  5. If you need to cook the steak in batches because your pan isn’t big enough do that rather than crowding the pan, you want to get a good sear on the steak and if you crowd the pan your steak with steam instead of sear.
  6. When the steak is done cooking remove it from the pan.
  7. Add the ginger and garlic to the pan and sauté for 10-15 seconds.
  8. Add the soy sauce, water and dark brown sugar to the pan and let it come to a boil.
  9. Add the steak back in and let the sauce thicken for 20-30 seconds.
  10. The cornstarch we used on the steak should thicken the sauce, if you find it isn’t thickening enough add 1 tablespoon of cornstarch to 1 tablespoon of cold water and stir to dissolve the cornstarch and add it to the pan.
  11. Add the green onions, stir to combine everything, and cook for a final 20-30 seconds.
  12. Serve immediately.

Ingredients:

8 ounces bacon (about 7-8 slices), chopped

4 medium carrots, cut into 1/2-in. pieces (about 2 1/2 cups)

1 large red onion (about 10 oz.), cut into 1/2-in. pieces

4 garlic cloves, chopped (about 2 Tbsp.)

1 cup beer

1/4 cup all-purpose flour

8 cups low-sodium beef broth

1 teaspoon kosher salt

1/2 teaspoon black pepper

12 ounces baby golden potatoes

1 1/2 pounds Perfect Roasted Beef Tenderloin

3 tablespoons coarse-grain mustard

1 tablespoon red wine vinegar

1/2 cup chopped fresh flat-leaf parsley

How to Make It:

Step 1

Cook bacon in a large Dutch oven over medium-high until crisp, about 8 minutes. Transfer bacon to a plate lined with paper towels, reserving 2 tablespoons drippings in Dutch oven.

Step 2

Add carrots and onion to drippings in Dutch oven; cook, stirring often, until beginning to soften, 4 to 6 minutes. Add garlic; cook, stirring occasionally, 1 minute. Add beer; cook about 5 minutes, stirring and scraping to loosen browned bits from bottom of Dutch oven.

Step 3

Stir in flour; cook, stirring constantly, until mixture is thickened and beginning to brown, 5 minutes. Whisk in broth, salt, and pepper; bring to a boil, whisking constantly. Reduce heat to medium-low, and add potatoes; cover and cook until potatoes are tender, about 20 minutes. Stir in Beef, mustard, vinegar, and cooked bacon. Sprinkle with parsley, and serve immediately.
