Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup shortening
  • 1/3 cup cold water
  • 8 medium tart apples, peeled and cored
  • 8 teaspoons butter
  • 9 teaspoons cinnamon sugar, divided
  • sauce:
    • 1-1/2 cups packed brown sugar
    • 1 cup water
    • 1/2 cup butter, cubed

Directions

  1. In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide into 8 portions. Cover and refrigerate at least 30 minutes or until easy to handle.
  2. Preheat oven to 350°. Roll out each portion of dough between 2 lightly floured sheets of waxed paper into a 7-in. square. Place an apple on each square. Place 1 teaspoon butter and 1 teaspoon cinnamon sugar in the center of each apple.
  3. Gently bring up corners of dough to each center, trimming any excess; pinch edges to seal. If desired, cut out apple leaves and stems from dough scraps; attach to dumplings with water. Place dumplings in a greased 13×9-in. baking dish. Sprinkle with half the remaining 1/2 teaspoon cinnamon sugar.
  4. In a large saucepan, combine the sauce ingredients. Bring just to a boil, stirring until blended. Pour over apples; sprinkle with remaining cinnamon sugar.
  5. Bake until apples are tender and pastry is golden brown, 50-55 minutes, basting occasionally with sauce. Serve warm.

Brioche French Toast

Brioche French Toast

Ingredients

  • 1 loaf (about 14–16 ounces/400–450g) store-bought or homemade brioche (slightly stale)
  • 4 large eggs
  • 1 cup (240g/ml) whole milk
  • 1 Tablespoon maple syrup, brown sugar, or granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon–1/2 teaspoon ground cinnamon
  • 1–2 Tablespoons (14–28g) unsalted butter, for cooking

Optional Toppings

  • Cinnamon butter or honey butter
  • Maple syrup
  • Confectioners’ sugar
  • Whipped cream
  • Fresh berries
  • Raspberry sauce, blueberry sauce topping, or strawberry sauce topping

Instructions

  1. Slice the brioche into 1-inch-thick slices and set aside.
  2. In a medium bowl, preferably with a pour spout, whisk the eggs. Add the milk, 1 Tbsp maple syrup/brown sugar/sugar, vanilla extract, and cinnamon and whisk until fully combined. The mixture will be creamy. Pour into a shallow dish, such as a pie plate or baking pan.
  3. Dip each slice of brioche into the egg mixture, about 5–10 seconds per side, coating both sides. Do not over-soak. (Brioche is enriched, so it absorbs the mixture quickly.)
  4. Melt 1 Tablespoon of butter in a large skillet over medium-low heat. Working in batches without over-crowding the skillet, add the bread slices and cook until golden brown and the bread releases easily from the pan, about 3–4 minutes. Flip and cook the other side for 2–3 minutes, until golden with a soft, custardy center. Add more butter to the skillet between batches as needed. If you find the brioche is browning too quickly, simply lower the heat.
  5. If cooking in batches, keep finished slices warm on a baking sheet in a 200°F (95°C) oven until ready to serve.
  6. Serve immediately with your favorite toppings like maple syrup, a dusting of confectioners’ sugar, berries, whipped cream, blueberry sauce topping, or strawberry sauce topping.

Notes

  1. Make Ahead Instructions: You can slice the brioche and cover lightly for up to 1 day. You can also make the egg custard mixture in step 2, and cover and refrigerate it overnight. Continue with step 3 when you are ready for breakfast.

  3. Brioche: Day-old, crusty bread is perfect for French toast so it can soak up the egg custard. If your brioche is fresh, here’s a shortcut for creating “stale” bread: Arrange the bread slices on a lined baking sheet and toast in a 300°F (149°C) oven for 10–15 minutes.
  4. Milk: Whole milk is best. For an even creamier texture, you can substitute half-and-half. Nondairy milks such as unsweetened almond milk or oat milk also work, though the French toast will be slightly less rich.
  5. Can I Bake This Instead of Cooking on the Stove? I don’t recommend it; there is not enough custard. If you’re looking for a baked option, I recommend using a recipe designed for that method, like my baked apple cider French toast, baked French toast casserole (with cream cheese), or pumpkin French toast casserole.

Ingredients

  • 14 tablespoons [196 g] unsalted butter, at room temperature
  • 1 1/2 cups [300 g] granulated sugar
  • 1/4 cup [50 g] brown sugar
  • 3/4 teaspoon fine salt
  • 1/2 cup [107 g] creamy peanut butter, see notes
  • 1 tablespoon pure vanilla extract
  • 1 large egg
  • 2 tablespoons water, at room temperature
  • 3/4 teaspoon baking soda
  • 1 3/4 cups [250 g] all-purpose flour
  • 3 oz [85 g] semi-sweet or bittersweet chocolate, chopped, or chips, see notes

Instructions

  • Line three sheet pans with aluminum foil, dull-side up, or parchment paper.
  • In the bowl of a stand mixer fitted with a paddle, beat the butter on medium speed until creamy, about 1 minute. Add the granulated and brown sugars and salt and beat on medium speed until light and fluffy, 2 to 3 minutes. Add the peanut butter and vanilla and mix again on medium speed until fully combined. Add the egg and water and mix on low speed until combined, then add the baking soda and mix again. Add the flour and mix on low speed until combined. Add the chocolate, if using, and mix on low until distributed evenly.
  • Form the dough into 3 oz [85 g] balls (1/4 cup) and place 4 dough balls an equal distance apart on a prepared pan and transfer it to the freezer for 20 minutes while the oven preheats.
  • Adjust an oven rack to the middle of the oven. Preheat the oven to 350F [180C].
  • After you put the first baking sheet in the oven, put the second one in the freezer.
  • Place the chilled baking sheet in the oven and bake until the dough balls have spread flat but are puffed slightly in the center, about 10 minutes. Lift one side of the sheet pan up about 4 in [10 cm] and gently let it drop down against the oven rack, so the edges of the cookies set and center falls back down. After the cookies puff up again in 2 minutes, repeat lifting and dropping the pan. Repeat a few more times to create ridges around the edge of the cookie. Bake for 14 to 16 minutes total, until the cookies have spread out and the edges are golden brown but the centers are much lighter and not fully cooked.
  • Transfer the pan to a wire rack. If desired, spray a fork with pan spray and gently make a criss cross pattern in the center of the cookie. Let the cookies cool for 10 minutes, then move from the pan to a wire rack to finish cooling. Store cookies in an airtight container at room temperature for 2 days (or refrigerate for up to 3 days).

Notes

I used Skippy Creamy Peanut Butter for these cookies. I have not tried them with a natural peanut butter, and don’t know if it will work in this application. I recommend using a processed peanut butter here. 

You can freeze the dough balls and bake off up to 2 weeks later. You may need to add more time to the baking the longer they are frozen. 

For peanut butter and jelly version, Place 1 teaspoon of jam in the top of the cookie scoop and use the back of spoon to spread it slightly over the inside of the scoop. Fill the scoop with cookie dough and proceed with the baking instructions. 

Throughout my recipes posted on this website, 1 cup of flour equals 142g. Please note that 1 cup of flour can range anywhere from 120g to 142g, depending on the baker or website. I found that after weighting many cups of flour and averaging the total, mine always ended up around this number. Weighing your flour instead of using cup measurements is the surest way to get the result I intended when developing the recipe.

Baking times are suggestions! Every oven bakes different, so please use your senses and intuition when figuring out when the cookies are done. If your oven is larger, many things will take longer to bake then a smaller oven.
