Ingredients 

For the Caramel Apples:

Optional Toppings:

  • Chopped pecans
  • Sprinkles
  • Mini M&M’s
  • Shredded coconut
  • Crushed Oreo cookies
  • Melted chocolate for drizzling
  • Crushed pretzels
  • Chopped peanuts

Instructions

  • If using store-bought apples, you should remove the wax coating first. Dip apples in hot water for a few seconds then rub them with a towel to remove wax. Dry the Apples really well. Remove stems and Insert Sticks into the top of the apples. Tip: refrigerating apples will help the caramel set faster while you prep toppings and melt caramel.
  • Line a baking sheet with parchment paper or a silicone liner. Prepare toppings so they are ready to use.
  • Heat caramel, cream and a pinch of salt over a double boiler or microwave for a few minutes stirring every 30 seconds until caramel is melted and smooth.
  • Roll apples in caramel, dipping apples sideways to coat almost to the top. We like to leave a little bit of Apple showing on top so you can see what kind of Apple you’re picking. Allow excess to drip back into the bowl. Scrape off the bottom of the Apple against the side of the bowl so you don’t get too much caramel pooling at the bottom
  • If you see a lot of air bubbles in your caramel start to form or if it gets too thick, then rewarm it slightly. If caramel so too runny, let it cool slightly before using.
  • Immediately after dipping in caramel, roll apples into your toppings or leave them plain if desired. Refrigerate at least 15 minutes or until caramel is set before drizzling with melted chocolate and enjoying.

Notes

*Best Caramels: Kraft or Werther’s Chewy Caramels work well

*Make-Ahead: Store cooled apples in an airtight container or individually in plastic wrap in the refrigerator for up to a week.

Tips for Making Great Caramel Apples

  • Remove Wax on store-bought apples by dipping in hot water for a few seconds.
  • Thoroughly dry the apples.
  • Skewer the apples and refrigerate before dipping so the caramel sets faster.
  • Prepare toppings ahead so you can quickly coat before the caramel sets.
  • To prevent caramel pooling at the bottom, dip, let the excess drip back, then scrape off the extra caramel on the edge of the bowl.
  • Refrigerate 15 minutes to help the caramel harden before adding melted chocolate drizzle.

Spinach Stuffed Shells

Ingredients 

  • ▢ 12 ounces jumbo pasta shells
  • ▢ 8 ounces spinach
  • ▢ 2 cups ricotta cheese
  • ▢ ½ cup grated parmesan cheese plus more for garnish
  • ▢ 3 cloves garlic minced
  • ▢ 1 tablespoon Italian Seasoning
  • ▢ 1 teaspoon salt
  • ▢ ½ teaspoon pepper
  • ▢ 3 cups Marinara Sauce
  • ▢ 2 cups shredded mozzarella cheese

Instructions 

  • Preheat the oven to 375 degrees Fahrenheit. Spray a 9X13 baking dish with cooking spray. Cook 12 ounces jumbo pasta shells according to the package directions and set aside.
  • In a skillet over medium-high heat, add 1 tablespoon of water and 8 ounces spinach and cook until the spinach has wilted and the water has evaporated.
  • In a medium bowl, whisk together 2 cups ricotta cheese, ½ cup grated parmesan cheese, 3 cloves garlic, 1 tablespoon Italian Seasoning, 1 teaspoon salt and ½ teaspoon pepper. Once everything is well combined, stir in the spinach.
  • Pour 1 cup of the 3 cups Marinara Sauce into the baking dish. Stuff each shell with the ricotta filling, about a tablespoon, and arrange them in a single layer, filling side up, in the pan.
  • Pour the remaining marinara sauce around and on the shells. Sprinkle the 2 cups shredded mozzarella cheese over the shells and bake for about 25-30 minutes, until the cheese is bubbling and browning.

Ingredients

  • 1 package (2 sheets) frozen puff pastry, thawed
  • egg wash: 1 large egg beaten with 1 Tablespoon milk
  • 8 ounces goat cheese
  • 2 large pears, thinly sliced
  • 2 Tablespoons coarse sugar (or brown sugar!)
  • 1/4 cup sliced almonds
  • sea salt for sprinkling
  • honey for drizzling

Instructions

  1. Preheat oven to 375°F (191°C). Line a 12×17-inch baking sheet with parchment paper or a silicone baking mat.
  2. Unroll the pastry sheets on a floured work surface. Place the edge of one over the other and use a rolling pin to adhere them together. Roll the whole thing out into a 10×14-inch rectangle. Fold over the edges and crimp down with a fork. Crimping is much easier the colder the pastry is, so place into the refrigerator to chill if needed.
  3. Brush the entire pastry, edges included, with egg wash. Top with goat cheese.
  4. Toss the pear slices and coarse sugar together. Line the pears on top of the pastry. Sprinkle with almonds and sea salt.
  5. Bake for 35-40 minutes until the edges are golden brown. Remove from the oven, place on a wire rack, and allow to cool for 10 minutes. Drizzle with honey before slicing and serving.

Notes

  1. Make Ahead Instructions: Assemble the tart through step 4. Place in the refrigerator up to 1 full day, then bake and serve. So easy!
