Fried Calamari

Ingredients

  • ▢1 pound calamari rings
  • ▢1 cup whole milk
  • ▢1 tablespoon lemon juice
  • ▢1 ½ cups all-purpose flour
  • ▢¼ cup cornstarch
  • ▢½ teaspoon salt
  • ▢1 teaspoon dried dill
  • ▢½ teaspoon paprika
  • ▢½ teaspoon pepper
  • ▢vegetable oil for frying
  • ▢lemon wedges for serving

Instructions 

  • Prepare 1 pound calamari rings by thawing them if they are frozen. Pat the rings dry and place them into a bowl.
  • Pour 1 cup whole milk and l1 tablespoon lemon juice over the rings and stir to combine and coat the rings evenly in the milk mixture.
  • In a separate bowl whisk together 1 ½ cups all-purpose flour¼ cup cornstarch½ teaspoon salt1 teaspoon dried dill½ teaspoon paprika, and ½ teaspoon pepper. Remove the rings from the milk mixture, allowing excess liquid to drip off, and toss them in the flour mixture.
  • Place the breaded calamari rings onto a plate or sheet pan and prepare a second plate or sheet pan by lining it with paper towels.
  • Heat about an inch of vegetable oil for frying in a large skillet over medium-high heat. When the oil is hot carefully place the battered calamari into the hot oil and fry them for about 3 minutes until they are golden brown.
  • When the calamari is finished frying place them onto the paper towel-lined plate or sheet pan. Work in batches until all the calamari is finished and serve fresh with lemon wedges.

Notes

If you can’t find calamari rings, you can use squid tubes and cut them into rings. You can also use a mix with tentacles. 

To air fry, follow the steps up until you fry them. Instead, spray the breaded calamari with oil and place them into your air fryer basket. Air fry at 400 degrees Fahrenheit for 4-5 minutes.

Ingredients

For the mushrooms

  • 1/2 teaspoon extra-virgin olive oil
  • 1 cup enoki or sliced shiitake mushrooms
  • 1/2 teaspoon tamari

For the spring rolls:

  • 4 ounces cooked soba or rice noodles
  • Peanut Sauce
  • 4 Vietnamese rice spring roll wrappers*
  • 1 avocado, sliced
  • Fresh basil & mint leaves
  • 1/4 cup microgreens
  • Tamari, for serving

Instructions

  • Heat the oil in a small skillet over medium heat. Add the mushrooms and cook until browned and soft, about 5 minutes. Remove the pan from the heat, add the tamari and toss. Set aside.
  • Toss the noodles with a few spoonfuls of the peanut sauce until they’re well coated.
  • One at a time, dip the rice paper wrappers into warm water for 5 seconds. Remove and place on a clean towel.
  • Place the noodles, mushrooms, avocado, herbs, and microgreens in the center of the rice paper. Wrap & tuck the sides, then the bottom flap, and then carefully roll until the wrapper is tightly closed.
  • Serve with extra peanut sauce and tamari for dipping.

Notes

You can find spring roll wrappers at Asian markets or in the Asian section of your grocery store.

Ingredients:

13.4 ounce Chickpeas
1 unit Bell Pepper
2 unit Scallions
1 unit Avocado
4 tablespoon Sour Cream(ContainsMilk)
1 tablespoon Southwest Spice Blend
1 unit Red Onion
1 unit Lime
6 unit Flour Tortillas(ContainsWheat)

Not included in your delivery:

2 teaspoon Olive Oil
Pepper
Salt

Instructions :

1-Wash and dry all produce. Adjust rack to upper position and preheat oven to 425 degrees. Drain and rinse chickpeas, then pat dry with a paper towel. Place on a baking sheet, pushing toward one side, and toss with Southwest spice, a drizzle of olive oil, and a pinch of salt and pepper. Roast in oven until crisp, 20-25 minutes total. TIP: Be careful—they may pop.


2-While chickpeas roast, core and seed bell pepper, then cut into ½-inchwide strips. Halve and peel onion, then cut into ½-inch-thick wedges. Finely dice a wedge or two until you have 3 TBSP diced onion. Trim, then thinly slice scallions, keeping greens and whites separate.


3-After chickpeas have roasted 5-10 minutes, remove baking sheet from oven and toss bell pepper and onion wedges with a drizzle of olive oil on empty side of same sheet. (TIP: Use tongs to avoid burns.) Return sheet to oven and roast until veggies are tender and lightly browned, about 15 minutes.


4-Zest lime until you have ½ tsp zest, then cut into quarters. Halve and pit avocado, then scoop flesh into a medium bowl. Add 1 TBSP diced onion and juice from one lime quarter. Season with salt and pepper. Mash with a fork until mostly smooth. Stir in scallion whites and half the scallion greens. Taste and add more salt, lime juice, or diced onion, if desired.


5-Wrap tortillas in foil and place in oven to warm, about 5 minutes. Meanwhile, stir lime zest, sour cream, and a squeeze of lime in a small bowl. Season with a pinch of salt.


6-Spread guacamole onto tortillas. Fill each with chickpeas and roasted veggies, then dollop with crema and garnish with remaining scallion greens. Serve with any remaining lime quarters on the side for squeezing over.
