Ingredients

  • 2 cups water
  • 1-1/2 cups sugar
  • 4 cups unsweetened apple juice
  • 1 cup unsweetened pineapple or orange juice
  • 1/2 cup lemon juice
  • 30 freezer pop molds or 20 paper cups (3 ounces each) and wooden pop sticks

Directions

  1. In a large saucepan, combine water and sugar; bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until sugar is dissolved, stirring occasionally. Remove from the heat; stir in juices.
  2. Fill molds with 1/4 cup juice mixture or cups with 1/3 cup juice mixture. Top molds with holders. If using cups, top with foil and insert sticks through foil. Freeze until firm.

Ingredients  

For the Strawberry Pie Filling:

  • 8 oz strawberries (chopped)
  • 1/4 cup granulated sugar
  • 1 TBS cornstarch
  • 1 tsp lemon juice

For the Cheesecake Filling:

  • 4 oz cream cheese (1/2 block, softened)
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract

For the Pies:

  • 2 pie crusts
  • 1 large egg
  • 1 TBS milk

For the Icing (optional):

  • 1 cup powdered sugar
  • 2 TBS heavy cream
  • 1/8 tsp vanilla extract

Instructions

  • Preheat the oven to 350 Fahrenheit. Line a baking pan with parchment paper.

For the Strawberry Pie Filling:

  • Add the strawberries, sugar, and cornstarch to a medium sauce pan over medium heat. Bring to a simmer, and let the mixture cook, stirring occasionally until thickened. About 4-6 minutes. 8 oz strawberries, 1/4 cup granulated sugar , 1 TBS cornstarch
  • Remove from the heat and stir in the lemon juice. Scoop the strawberry filling into a bowl and let it cool at room temperature until needed. 1 tsp lemon juice

For the Cheesecake Filling:

  • Add the cream cheese to a bowl and beat with a hand mixer or stand mixer until smooth. 4 oz cream cheese
  • Add in the sugar and mix for a couple minutes until smooth and combined. 1/4 cup granulated sugar
  • Add in egg yolk, and vanilla and mix until just combined. 1 large egg yolk , 1/2 tsp vanilla extract
  • Cover the mixture and place it in the fridge until needed.

For the Pies:

  • Roll out the pie crusts on a lightly floured surface. Cut each pie crust into 6-8 rectangles, about 3×5 in size. Re bunch the the pie crust and re-roll as needed to get as many rectangles as you can. 2 pie crusts
  • Cut slits into half of the rectangles for venting.
  • Take a pie square without slits and add a spoonful of strawberry mixture down one half of the raw pie crust.
  • Spoon the cheesecake filling onto the other half.
  • Add another rectangle with slits on top of the pie crust and line up the edges. Use a fork to crimp the edges closed.
  • Whisk together the egg and milk in a small bowl with a fork. Brush the egg wash on top of the pie crusts. 1 large egg, 1 TBS milk
  • Sprinkle the tops with granulated sugar, or coarse sugar if desired.
  • Place the pies onto the prepared baking sheet, and bake until the tops are lightly golden and the insides are bubbling, about 20-25 minutes.
  • Remove from the oven and let the pies cool on the baking sheet for about 10 minutes, then enjoy or continue to cool.

For the Icing (optional):

  • Whisk together the ingredients for the icing in a small bowl until smooth. 1 cup powdered sugar, 2 TBS heavy cream, 1/8 tsp vanilla extract
  • Using a fork or spoon, drizzle the icing over the pies if desired.

Raspberry Cheesecake Bars

These raspberry cheesecake bars combine a buttery crust with a creamy cheesecake layer, topped with vibrant, juicy raspberries for a perfect balance of tart and sweet in every bite.

Ingredients

For crust

  • 2 cups crushed Nilla wafers
  • 2 Tbsp. granulated sugar 
  • 5 Tbsp. butter, melted 

For cheesecake

  • 2 (8-oz.) blocks cream cheese, softened
  • 2/3 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • Juice and zest of 1 lemon 
  • 1 tsp. pure vanilla extract 
  • 1 tsp. kosher salt

For topping

  • 4 cups raspberries, divided
  • 1/4 cup granulated sugar
  • Juice of 1/2 lemon
  • Pinch kosher salt

Directions

Step 1

Preheat oven to 350°. Line a 9”-x-9” baking pan with parchment, leaving a 2” overhang. 

Step 2

In a medium bowl, combine crushed Nilla wafers and sugar. Add butter and mix until combined and mixture looks like wet sand. Press into bottom of prepared pan. Bake until lightly golden, about 15 minutes. Let cool while making cheesecake filling.

Step 3

Reduce oven to 325°. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and beat until no lumps remain. Add eggs, one at a time, beating well after each addition. Add lemon juice, zest, vanilla, and salt and beat well. Pour batter over crust and smooth top. Place pan into a larger roasting pan and pour enough boiling water into roasting pan to come halfway up the baking pan. 

Step 4

Bake until only the center is slightly jiggly, 25 minutes. Remove from oven and let cool to room temperature. 

Step 5

Meanwhile, make raspberry topping: In a small saucepan over medium heat, combine 3 cups of raspberries, sugar, lemon juice, and salt. Simmer until raspberries are broken down and sauce is thickened, about 10 minutes. Remove from heat and gently stir in remaining raspberries, trying not break any fresh raspberries. Let cool slightly. 

Step 6

Pour raspberry topping over cheesecake and refrigerate until set, at least 4 hours and up to overnight.  

Step 7

Slice into squares before serving.
