Ingredients

  • 1 1/2 cups (180 g.) all-purpose flour
  • 6 Tbsp. unsweetened cocoa powder
  • 1/2 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 1/2 cup (100 g.) granulated sugar
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 1/3 cup raspberry or strawberry jam

Directions

Step 1

Arrange racks in upper and lower thirds of oven; preheat to 350°. In a medium bowl, whisk flour, cocoa powder, baking powder, and salt.

Step 2

In a large bowl, using a handheld mixer on medium-high speed (or in the large bowl of a stand mixer fitted with the whisk attachment), beat butter and sugar until creamy and smooth, about 2 minutes. Beat in egg and vanilla, then add dry ingredients and beat on medium-low speed until just combined.

Step 3

Using a small cookie scoop (about 1 1/2 Tbsp.), portion dough onto 2 parchment-lined baking sheets. Roll each piece into a ball, then press your pinkie into ball at a slight angle. Press your pinkie in at the opposite angle to create a heart shape. Fill each heart with a scant teaspoon of jam.

Step 4

Bake cookies, rotating sheets top to bottom halfway through, until edges feel firm to the touch and have puffed slightly, 10 to 12 minutes.

Step 5

Transfer sheets to a wire rack. Let cool 10 minutes before serving.

Notes:

To make the hearts, simply press one of your fingers (my pinky is the right size for me) into the unbaked cookie at an angle, then go in the other direction to create a “v” or heart. You can then fill your hearts with whatever type of jam you prefer. I like raspberry and strawberry, but cherry would also be so good in these, too.

These cookies don’t require any chill time, which means you can have something sweet to share with your loved ones in under an hour.

Cranberry Almond Popcorn Balls

Cranberry Almond Popcorn Balls

A healthy twist on a classic favorite! Almond butter popcorn mixed with honey make the perfect “glue” for these healthy popcorn balls. They’re cranberry popcorn balls without marshmallows, but with lots of flavor!

Yield: 8-12 popcorn balls

Ingredients

  • 6 cups air-popped popcorn (1 bag of Quinn microwave popcorn)*
  • 1/3 cup honey
  • 1/4 cup almond butter
  • 1/3 cup dried cranberries

Instructions

  1. Pop the bag of popcorn following the method on the back of the bag; I found I needed less than the 3 minutes given, or my popcorn would burn!
  2. While the popcorn is popping, heat the honey with the almond butter in a small saucepan on the stove over medium heat. Allow the mixture to simmer for a few minutes before removing from heat.
  3. Pour the popcorn into a large bowl, then drizzle the almond/honey mixture over the popcorn. Use a large wooden spoon to coat everything thoroughly (or use your hands, but be careful, it’s hot).
  4. Add the cranberries and stir to combine.
  5. Allow the mixture to sit at room temperature for about 30 minutes before forming into balls – make them as big or as small as you’d like, but be sure to pack them together FIRMLY to keep it all together.
  6. Place the popcorn balls on a parchment-lined baking sheet. Enjoy!

Popcorn balls will keep at room temperature for 3-4 days.

Notes

The flavour that used here is maple kettle corn of Quinn popcorns, but you can try any flavour!

Gingerbread Swirl Fudge

You only need a few simple ingredients and 1 pan to make this super creamy and easy gingerbread swirl fudge!

Ingredients

  • 14 ounce (396g) can full-fat sweetened condensed milk
  • 3 and 1/4 cups (585g) white chocolate chips, divided
  • 1 teaspoon pure vanilla extract
  • 3 Tablespoons (45ml) unsulphured or dark molasses (do not use blackstrap; I prefer Grandma’s brand)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice

Instructions

  1. Line an 8-inch square baking pan with aluminum foil or parchment paper, leaving enough overhang on the sides to easily remove the fudge once it has set. Set aside. Have 2 pans/pots ready: a medium saucepan and a small saucepan.
  2. Combine condensed milk and 3 cups (540g) of white chocolate chips in a medium saucepan over medium heat. Stir constantly until the chocolate chips are melted. Once the mixture is smooth, remove from heat and stir in the vanilla extract. Transfer half of the mixture to a smaller saucepan over medium heat. (Leave the other half aside.) Stir in the 1/4 cup (45g) of white chocolate chips and the remaining ingredients over medium heat until smooth.
  3. Now you have half plain white fudge and half gingerbread fudge. Spread a thin layer of white fudge into the bottom of the lined baking pan. (If the white fudge has thickened too much, gently re-heat it over the stove for a few seconds. It’s important that white fudge is the base of the fudge!) Pour some gingerbread fudge on top, followed by more white fudge, more gingerbread fudge, etc until everything is used up. Using a toothpick, gently swirl the two fudges together.
  4. Cover with aluminum foil and refrigerate for 5 hours or overnight until completely set. Once set, remove the fudge from the baking pan by lifting out the aluminum foil or parchment paper. Peel away foil and cut into 1-inch squares.
  5. Fudge stays fresh covered at room temperature for 1 week or in the refrigerator for 2-3 weeks. I always stack it in a Tupperware between layers of parchment paper.

Notes

  1. Make Ahead Instructions: Fudge is a wonderful recipe to make ahead of time! It’s great in the refrigerator for up to 3 weeks or you can freeze it. To freeze, double wrap the entire batch of fudge (the whole block) in plastic wrap and store in an airtight container in the freezer for up to 2 months. Thaw overnight in the refrigerator before serving.

  3. Milk: NOT evaporated milk. You’ll need 1 standard can of sweetened condensed milk.
