Ingredients

Salsa Verde

  • 4 medium tomatillos, husked
  • 1/2 small jalapeño, seeds removed
  • 1/2 white onion, coarsely chopped
  • 2 cloves garlic
  • 1 Tbsp. fresh cilantro leaves
  • 1 Tbsp. fresh lime juice
  • 1/2 tsp. kosher salt

Ground Beef

  • 1 Tbsp. neutral oil
  • 2 cloves garlic, finely chopped
  • 1 lb. (85% lean) ground beef
  • 1 tsp. kosher salt
  • 1/2 tsp. chili powder
  • 1/2 tsp. dried Mexican oregano
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground cumin

Chalupas

  • 1 3/4 cups (210 g.) all-purpose flour
  • 3/4 cup (70 g.) masa harina
  • 1 1/2 tsp. baking powder
  • 1 1/4 tsp. kosher salt
  • 2 Tbsp. cold unsalted butter, cut into pieces
  • 3/4 cup plus 1 tbsp. milk
  • Vegetable oil, for frying (about 4 c.)
  • 1/2 cup black beans
  • 1/4 cup chopped white onion
  • 1/4 cup crumbled cotija
  • Fresh cilantro leaves, for serving

Directions

Salsa Verde

Step 1

Arrange a rack in upper third of oven; preheat to 400°. Line a small baking sheet with foil. Place tomatillos on prepared sheet.

Step 2

Roast tomatillos until softened and slightly charred, about 25 minutes. Let cool 5 minutes.

Step 3

In a blender, pulse tomatillos, onion, garlic, cilantro, lime juice, and salt until smooth. Transfer to a medium bowl; set aside until ready to use.

Ground Beef

Step 1

While tomatillos roast, in a medium skillet over medium-high heat, heat oil. Cook garlic, stirring frequently, until fragrant, about 2 minutes.

Step 2

Add ground beef, salt, chili powder, oregano, coriander, and cumin. Cook, breaking up meat with a spoon, until browned, 6 to 8 minutes; set aside until ready to use.

Chalupas

Step 1

In a large bowl, combine flour, masa, baking powder, and salt. Add butter and mix with your fingertips to incorporate until small pebbles form. Slowly stir in milk until a dough begins to form. Using your hands, shape dough into a ball. Cover bowl with plastic wrap and let rest 10 minutes.

Step 2

Into a medium heavy skillet, pour oil to a depth of 1″. Heat over medium heat until a deep-fry or instant-read thermometer registers 325°.

Step 3

Divide dough into 6 (2.8-oz.) pieces. Roll each piece to a 5″ to 6″ circle. Dock or prick each piece with a fork to prevent air bubbles. Using tongs, lower one-half of one circle into oil. Fry until shell is firm and holds its shape, 5 to 10 seconds. Release half you’re holding with tongs into oil—it should fold into a taco shell shape. Continue to fry, turning once, until golden brown, 2 to 3 minutes per side. Transfer to paper towels to drain. Repeat with remaining dough.

Step 4

Build chalupas with salsa verde, beef, beans, onion, cotija, and cilantro.

Storage

Chalupas are best eaten right away, but you can save the shells for up to 2 days in a resealable bag and reheat in a 350° oven.

Load these up with your favorite toppings, and get ready for the most satisfying crispy bite.

Ingredients

  • 2 cups shredded, cooked chicken
  • 1/4 cup canned, chopped green chiles 
  • 1 cup shredded cheddar 
  • 1 cup queso blanco (or crumbled feta)
  • 1/2 tsp. kosher salt (omit if chicken is already seasoned)
  • 2 tsp. hot sauce, optional
  • 10 7” flour tortillas
  • 1/2 cup vegetable, canola, or other neutral oil
  • Pico de gallo, sour cream, and guacamole, for serving

Directions

Step 1

In a large bowl, combine chicken, chiles, cheeses, salt, and hot sauce (if using).

Step 2

Lay 1 tortilla down on a work surface. Spread a heaping 1/4 cup of the chicken mixture onto the bottom third of the tortilla. Roll up tightly and place seam side down on a plate. Repeat with remaining tortillas and filling.

Step 3

In a 10” skillet, heat oil over medium-high heat until the temperature reaches between 350-375 ° F. (You want to hear a sizzle as soon as the food hits the oil.)

Step 4

Add 3 of the flautas to the oil, seam side down. Cook, turning every 30 to 60 seconds, until golden all over, about 2 to 3 minutes. Transfer flautas to a large paper towel-lined plate or baking sheet. Repeat with remaining flautas. Serve immediately with pico de gallo, sour cream, and guacamole.

  • How do I prevent my tortillas from cracking? If tortillas are cracking when assembling, warm them in the microwave first: wrap a few tortillas in a damp paper towel and heat for about 20 seconds, or until they are pliable.
  • How do I keep my flautas together? If they’re unraveling after being assembled, spear with a toothpick or two so they hold their shape while frying. Once fried, they should hold their shape on their own.
  • How do I make crispy chicken flautas? The key to crispy chicken flautas is to fry them at a high heat. Use a thermometer to make sure your temperature reaches 350-375°. Tip: You should hear a sizzle as soon as the food hits the oil; feel free to test with a strip of tortilla if you’re unsure.

Storage

Store leftover flautas in an airtight container for up to three days. Warm in a pan on the stove or in a 350º oven for 5-7 minutes.

Don’t let the grocery store fool you asparagus has a season (and it’s not the middle of August). Spring is prime time for these green stalks, when they’re at their bright, perky, taut-skinned best. Grilled until lightly charred and tender, they take on a smoky depth that pairs beautifully with a rich, nutty tahini sauce. The result is a simple yet elevated dish that feels fresh, vibrant, and full of flavor perfect for showcasing asparagus at its absolute peak.

Ingredients

1 bunch thick asparagus (about 1 lb.), woody ends trimmed

Extra-virgin olive oil (for drizzling)

Kosher salt, freshly ground pepper

3 oil-packed anchovy fillets

1 garlic clove, coarsely chopped

¼ cup mayonnaise (such as Duke’s)

3 Tbsp. fresh lemon juice

2 Tbsp. tahini

1 lemon (optional)

Preparation

Step 1

Prepare a grill for medium-high heat. Place 1 bunch thick asparagus (about 1 lb.), woody ends trimmed, in a large bowl and lightly drizzle with extra-virgin olive oil. Season with kosher salt and freshly ground pepper and toss to coat.

Step 2

Grill asparagus, turning once or twice, until lightly charred and crisp-tender, about 4 minutes. Transfer back to bowl. (Alternatively, cook asparagus in a large pot of boiling generously salted water until dark green and just crisp-tender, about 2 minutes. Using tongs, immediately transfer to a large bowl of ice water and let sit 1 minute. Transfer to a kitchen towel and pat dry.)

Step 3

Using the flat side of a chef’s knife, smash together 3 oil-packed anchovy fillets and 1 garlic clove, coarsely chopped, on a cutting board to make a paste. (Alternatively, you can smash in a mortar and pestle.) Transfer paste to a small bowl, ¼ cup mayonnaise3 Tbsp. fresh lemon juice, and 2 Tbsp. tahini, and whisk until creamy. Season tahini mayo with salt and pepper.

Step 4

Spoon tahini mayo onto a platter and place grilled asparagus alongside for dipping. Finely grate zest from 1 lemon over asparagus if desired and season with more pepper.

Notes:

If you’re grilling, roasting, or steaming asparagus, or otherwise planning to serve them whole, look for thick spears.

The ratio of fiber to sweet tender flesh is better distributed than their pencil-thin (though admittedly elegant) siblings, and for the purposes of grilling, they’re easier to manipulate with less risk of falling through the grates.

Save skinny asparagus for stir-fries, sautés, or other situations in which they’ll be sliced up.

The season is short-lived, so the rules are straightforward: Cook asparagus simply and often, and serve it with something salty and fatty to offset its sweet, nutty grassiness.

This tahini mayo is an instant favorite that checks all the boxes. It’s veritable super sauce as silky as hollandaise, with the anchovy-garlic sharpness of bagna cauda, both classic pairings for asparagus.

The rest of the year serve the sauce with radishes or cucumbers to dip into, pooled under tomatoes, alongside breaded chicken, or tossed with kale as a sort of tahini Caesar.
