Ingredients

1⅓ cups instant corn masa flour (such as Maseca)

5 Tbsp. lard, melted, or vegetable oil, divided

2½ tsp. Diamond Crystal or 1½ tsp. Morton kosher salt, divided, plus more

4 guajillo or dried New Mexico chiles, stems and seeds removed

2 morita chiles, stems removed, or 2 canned chipotle chiles in adobo

1 tsp. ground coriander or cumin

1½ lb. medium shrimp, peeled, deveined

4 garlic cloves, thinly sliced

2 sprigs thyme

1 Tbsp. apple cider vinegar

1 tsp. agave syrup or honey

3 Tbsp. unsalted butter, cut into pieces

Sliced onion, sliced avocado, cilantro leaves with tender stems, and lime wedges (for serving)

Preparation

Step 1

Stir masa, 1 Tbsp. lard, 1 tsp. Diamond Crystal or ½ tsp. Morton salt, and 1 cup water in a medium bowl until a soft and slightly sticky dough forms. If dry, mix in another 1 Tbsp. water. Cover and let sit at least 30 minutes and up to 3 hours.

Step 2

Meanwhile, bring guajillo chiles, morita chiles, coriander, and 1½ cups water to a boil in a small saucepan. Cover, remove from heat, and let sit, stirring occasionally, 30 minutes to allow chiles to soften. Transfer to a blender and purée until smooth; set aside.

Step 3

Place rack in lowest position in oven; preheat to 500°F. Brush a rimmed baking sheet with 2 Tbsp. lard. Divide dough into 4 pieces and form into balls. Set on work surface and cover with a damp kitchen towel. Place 1 ball between 2 sheets of parchment or wax paper. Using a small skillet or saucepan, gently press ball into a 5″-diameter disk. Carefully peel away parchment; place on prepared baking sheet. Repeat with remaining balls.

Step 4

Bake gorditas until outer edges are lightly golden, 10–12 minutes. Turn over and bake until golden brown and crisp, 10–12 minutes. Transfer to plates and let cool 10 minutes. Insert a paring knife into side of gordita and, using a slow sawing motion, cut open along one side (keep other side intact).

Step 5

Heat remaining 2 Tbsp. lard in a large skillet over high. Cook shrimp until lightly browned and just cooked through, about 1 minute per side. Transfer to a medium bowl. Reduce heat to medium and cook garlic in same skillet, tossing often, until beginning to brown, about 1 minute. Add thyme sprigs, vinegar, agave, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, and reserved chile purée. Cook, stirring occasionally, until brick red and the consistency of a thick sauce, 6–8 minutes. Add shrimp and any juices and cook 1 minute. Remove from heat; add butter and stir constantly until melted and sauce is glossy. Season with more salt if needed. Remove and discard thyme.

Step 6

Fill gorditas with shrimp mixture, onion, avocado, and cilantro. Serve with lime wedges for squeezing over.

  • ▢ 1¼ cups cooked bacon, chopped and divided
  • ▢ 1 (32-ounce) bag frozen diced potatoes
  • ▢ 4 cups chicken broth
  • ▢ 1 (10.5-ounce) can cream of chicken soup
  • ▢ 8 ounces cream cheese, softened and cubed
  • ▢ 1 (1-ounce) package dry ranch dressing mix
  • ▢ ½ teaspoon pepper
  • ▢ ½ teaspoon onion powder
  • ▢ 2 cups shredded sharp cheddar cheese, extra for serving
  • ▢ 1 cup half and half
  • ▢ green onion, chopped for garnish

Instructions 

  • Combine 1 (32-ounce) bag frozen diced potatoes, 4 cups chicken broth, 1 (10.5-ounce) can cream of chicken soup, 8 ounces cream cheese, softened and cubed, 1 (1-ounce) package dry ranch dressing mix, ½ teaspoon pepper, ½ teaspoon onion powder, and 1 cup of the 1¼ cups cooked bacon, in a 6-quart slow cooker.
  • Cover and cook on LOW for 5-6 hours or HIGH for 2-3 hours.
  • 15 minutes before serving, stir the soup to incorporate the cream cheese into the soup. Pour in 1 cup half and half and 2 cups shredded sharp cheddar cheese,. Cover and warm until melted.
  • Garnish with chopped green onion, shredded cheddar cheese, and additional ¼ cup bacon pieces, if desired.

Ingredients

Jackfruit

  • 1 (20-ounce) can Jackfruit, cored and shredded
  • 1 teaspoon extra-virgin olive oil
  • 2 garlic cloves, grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Pinch cayenne pepper
  • ½ teaspoon sea salt
  • Freshly ground black pepper
  • 1 (4-ounce) can diced green chiles, drained

Taquitos

  • 12 to 14 flour or flour+corn tortillas*, (see note)
  • ¾ cup refried beans
  • ½ cup jack cheese
  • ¼ cup chopped scallions
  • Extra-virgin olive oil cooking spray
  • Toppings, Guacamole, Pico de Gallo, cilantro, serranos

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • On the baking sheet, toss the shredded jackfruit with the olive oil, garlic, cumin, coriander, cayenne, salt and several grinds of pepper. Add the green chiles and toss again. Spread in a thin layer on the baking sheet. Bake for 15 to 18 minutes or until the jackfruit is lightly golden brown. Remove from the pan.
  • Line the baking sheet with a new sheet of parchment paper and warm the tortillas until they’re pliable, 3 to 5 minutes. Spread a strip of refried beans near the left edge of the tortilla. Add some of the jackfruit mixture and a sprinkle of cheese and scallions. Don’t overstuff. Tuck and roll into thin taquitos and carefully transfer each to the baking sheet. If necessary, you can use toothpicks to hold them in place.
  • Spray very generously with olive oil cooking spray and bake 20 minutes or until golden brown and crispy around the edges.
  • Top with desired toppings.

Notes

*I got the best results with these small, pliable flour+corn tortillas which I find at Whole Foods. In terms of texture, flour tortillas are the next best option, as they hold their shape better and crack less than corn tortillas.
