Carrot Cake Baked Oatmeal

Ingredients

Dry Mixture

  • 2 1/2 cups (220g) rolled oats (old fashioned not quick)
  • 1/2 cup chopped (55g) pecans or walnuts
  • 1 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground dried ginger

Wet Mixture

  • 1/3 cup (98g) real maple syrup
  • 1/3 cup unsweetened applesauce
  • 2 Tbsp avocado oil or olive oil
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 cups milk (preferably 2% or whole)
  • 1 cup (slightly packed, 150g) finely grated carrots (about 2 medium large)

Honey Cream Cheese Icing

  • 3 oz cream cheese, softened
  • 3 Tbsp honey (or more to taste)

Instructions

  • Heat oven to 350 degrees. Spray a 9 by 9-inch baking dish with non-stick cooking spray and set aside.
  • In a large mixing bowl toss together oats, pecans, baking powder, cinnamon, nutmeg and ginger.
  • In a separate large mixing bowl whisk together maple syrup, applesauce, avocado oil, eggs, vanilla and salt whisking until well combined. Pour in milk and add carrots and whisk.
  • Pour oat mixture into milk/carrot mixture and whisk to combined. Pour mixture into prepared baking dish and spread into an even layer (so the oats and carrots appear evenly spread out and not heaped).
  • Bake in preheated oven until set in the center and 35 to 40 minutes. Let cool on a wire rack 15 minutes before slicing.
  • In a medium mixing bowl using an electric hand mixer whip together the cream cheese and honey for several minutes until its nice and fluffy.
  • Serve warm slices of carrot cake baked oatmeal with a fair drizzle of the cream cheese icing. If anyone would like it any sweeter just serve with a little extra honey drizzled over.
  • Store the oatmeal covered in the fridge for up to 5 days.

Sayur Lodeh is a comforting Southeast Asian vegetable stew known for its rich coconut broth and fragrant spices. Filled with tender vegetables and simmered until flavorful, it’s a wholesome, satisfying dish that’s perfect served with steamed rice for a simple yet deeply nourishing meal.

Ingredients

Pressed rice cakes:

1 cup (200 g) uncooked jasmine rice

2 cups (500 ml) water

Banana leaves, defrosted if frozen (optional)

Sayur lodeh:

2 fresh long red chilies like Fresno or cayenne, or 2 tsp chile paste like sambal oelek

3 cloves garlic, peeled

3 oz. (85 g) shallots, peeled and roughly chopped

½ Tbsp. peeled and roughly chopped fresh ginger

1 tsp. ground coriander

2 Tbsp. vegetable oil

2 cups (500 ml) unsweetened coconut milk

2 cups (500 ml) water

8 oz. (250 g) chayote, peeled, seeded, and cut into 3-in (7.5-cm) matchsticks

1 small turnip, peeled and cut into 1-in (2.5-cm) cubes

2 medium carrots, peeled and cut into 3-in (7.5-cm) matchsticks

4 oz. (100 g) green beans, trimmed and cut into 2-in (5-cm) lengths

4 oz. (100 g) firm tofu or tempeh, cut into 1-in (2.5-cm) cubes

1-in (2.5-cm) piece fresh galangal, cut into coins (optional)

1 plump stalk lemongrass, trimmed and smashed

6 oz. (175g) lacinato kale or other hearty green vegetable, shredded

1 tsp. fine sea salt

½ tsp. freshly ground pepper

½ tsp. granulated sugar

1 tsp. fine sea salt

Fried shallots, for garnish

Preparation

For the Pressed Rice Cakes:

Step 1

Rinse the rice 2 to 3 times until the water runs clear. Cook in a rice cooker if you have one (measure rice using a standard measuring cup, not a rice-cooker cup), or on the stovetop, with 2 cups of water

Step 2

To prepare the banana leaves, gently unfold them and run one leaf under hot running water to soften. Trim off the tough outer edge with scissors. Cut a length of banana leaf-it has to be big enough to line a loaf pan and have enough overhang, about 5 to 6 inches (12 to 15 cm), to fold over and cover the top.

Step 3

Line a loaf pan with the banana leaf, shiny-side down (the side with the ridges). If it tears, just patch it with another.

Step 4

While the rice is still hot, pack it into the pan, pressing down to compress. Fold the two ends of the leaf over so they overlap in the middle. Tuck in the edges. If the leaf isn’t long enough, cover the gap with another leaf.

Step 5

Leave to cool for at least 2 hours. (You can also refrigerate it to speed up the process.) If you leave it in the pan overnight, the rice will be imbued with the delicate, tea-like flavor and fragrance of the banana leaves.

Step 6

Unmold carefully and peel off the banana leaves. Slice crosswise like a bread loaf and then cut into smaller rectangles or squares.

For the Sayur Lodeh:

Step 7

Make the spice paste by combining the chiles, garlic, shallots, ginger, and ground coriander in a mini food processor. Blitz to form a rough paste the texture of oatmeal.

Step 8

Swirl the oil into a medium Dutch oven or heavy-bottomed pot and set over medium heat. When shimmering hot, add the spice paste and fry until it becomes aromatic and turns a few shades darker, 2 to 4 minutes.

Step 9

Stir in the coconut milk and water. Add the chayote, turnips, carrots, green beans and tofu, and bring to a boil, adding more water to cover the vegetables if necessary. Drop in the galangal, if using, and lemongrass. Reduce the heat to a gentle simmer and cover. Simmer until the chayote and turnips are almost cooked through, 10 to 12 minutes.

Step 10

Stir in the kale, salt, pepper, and sugar. Continue to simmer until the kale is just tender, 2 to 4 minutes. Taste and adjust seasoning as needed. If possible, let the soup sit for 1 to 2 hours so the flavors can meld.

Step 11

To serve, distribute Pressed Rice Cakes among 4 to 6 large shallow bowls. Pour ½ to ¾ cup (125 to 200 ml) sayur lodeh and vegetables into each bowl. Sprinkle with fried shallots and serve.

Ingredients

  • ▢2 lb Steak Sirloin or Ribeye, cut into 1-inch bites.
  • ▢1.5 lb Potatoes Baby Gold, quartered.

Steak Marinade:

  • ▢1 tbsp Olive Oil
  • ▢1 tbsp Soy Sauce The secret for browning
  • ▢1 tsp Worcestershire Sauce
  • ▢1/2 tsp Garlic Powder
  • ▢1/2 tsp Black Pepper

The “Flavor Bomb” Garlic Butter

  • ▢3 cloves of garlic
  • ▢1 tbsp fresh parsley
  • ▢2 oz melted butter

The Potato Seasoning:

  • ▢1 tbsp oil
  • ▢1 tsp smoked paprika
  • ▢1 tsp garlic powder
  • ▢4/4 tsp salt

Instructions 

  • Preheat Air Fryer to 200°C (400°F). Toss potatoes in the seasoning mix.
  • Place potatoes in the basket. Cook for 10 minutes.
  • While potatoes are cooking, toss the steak chunks in the marinade bowl.
  • Open the basket. Push the potatoes to the sides (or shake them around to make space). Add the steak bites in a single layer in the center.
  • Air fry everything together for another 6–8 minutes. (Check at 6 mins you want medium-rare to medium, not rubber!). Transfer everything to a large bowl while ho
  • Mix the butter, garlic, and parsley until well combined. Pour the melted garlic butter over the top, and toss immediately. The heat mellows the raw garlic so it turns fragrant, not sharp.

Notes

Cooking this recipe is easy, but there are a couple of small things that make a big difference.

  • Why marinate the steak first
    Marinating the steak bites helps season the meat evenly and improves browning during cooking. Ingredients like soy sauce and Worcestershire sauce add flavour while helping the surface of the steak caramelize faster in the air fryer. Because the steak is cut into small pieces, it only needs a short marinade time while the potatoes start cooking.
  • Cook the potatoes first
    Potatoes naturally take longer to cook than steak. Starting them first allows them to soften and begin crisping before the steak is added, so both finish cooking at the same time.
  • The “Cafe Delites” toss
    While everything is still hot, transfer the steak bites and potatoes to a large bowl and pour the melted garlic butter over the top. Toss immediately. The residual heat gently cooks the raw garlic, making it fragrant without turning bitter.
  • Don’t overcrowd the air fryer
    For the best browning, make sure the steak bites are added in a single layer. If the basket is too full, the steak can steam instead of sear.
