  • 1.13 cup fresh blueberries
  • 1.13 cup fresh blackberries
  • 7.95 ounce package plain Greek yogurt
  • 1.5 cup vanilla soy milk

INSTRUCTIONS:

  1. Add all of the ingredients to a blender.
  2. Pulse for 30 seconds, stir and pulse for an additional 30 seconds.
  3. Pour into two glasses and serve immediately or refrigerate until ready to serve.

Ingredients:

  • 2 cups any shape pasta, uncooked
  • 1 cup pasta water, reserved
  • 2 large garlic cloves, minced
  • 1 tbsp extra virgin olive oil
  • 1/4 cup + 2 tbsp pesto, divided
  • 2 cups grape tomatoes, cut in halves
  • 4 cups broccoli florets, coarsely chopped
  • 1/3 cup sun dried tomatoes, thinly sliced
  • 1/2 cup (2 oz) Parmesan cheese, grated
  • 1/2 tsp salt
  • 1/8 tsp red pepper flakes
  • Ground black pepper, to taste

Instructions:

  1. Cook pasta as per package instructions. Reserve 1 cup of pasta water, draining the rest. Set aside.
  2. While pasta is cooking, get all ingredients ready. Preheat large deep skillet or a dutch oven on medium heat, add olive oil and garlic. Sauté for 30 seconds, stirring frequently. Add 1 tbsp pesto, tomatoes and stir. Cook for 1 – 2 minutes and stir again. Cook another 1 – 2 minutes. Move to one side of the skillet and make sure the empty side of is positioned directly over heat. Add 1 tbsp pesto and broccoli, stir and cook for 4 minutes, stirring once.
  3. Remove skillet from heat and add remaining 1/4 cup pesto, sun dried tomatoes, salt, black pepper, red pepper flakes, pasta and pasta water. Stir gently and let flavours marinate for a few minutes. Do not cover because broccoli will become a mushy mess. I also like to add half Parmesan cheese in this step and the other half right before serving. Serve hot.

Vegetable Soup Recipe

This dish is great as a quick wholesome and warming meal on a winter evening. The vegetable combinations given in this recipe are just a guide as you can substitute them with any combination you prefer.

Ingredients:

Onions 1
Fennel ½ bulb
Celery 2 sticks
Leek 1
Carrot 2
Swede ½
Potatoes 300g
Sage 2 tbsp
Thyme 1 tbsp
Rosemary 1 tbsp
Vegetable stock 750ml
Bay leaf 2
Cream 50ml
Seasoning to taste

Method:

  1. Attach the thick slicing disc to the food processor.
  2. Slice the onions, fennel, celery, leek and carrot and removefrom the bowl.
  3. Slice the potato and swede in the food processor.
  4. Heat the oil in the saucepan.
  5. Add the onion, fennel, celery, leek, carrot and seasoning tothe saucepan and cook until soft.
  6. Add the swede, potatoes, herbs and stock to the saucepan.
  7. Bring the soup to a simmer and gently cook until thevegetables have softened.
  8. Take the pan off the heat and allow to cool to roomtemperature.
  9. Remove the bay leaves.
  10. In stages place the soup into the liquidiser and purée.(Remember not to over fill the liquidiser).
  11. Reheat and serve with a swirl of double cream.
