Kumpir (Turkish Baked Potatoes)

Kumpir, Turkey’s beloved street food, are generously stuffed baked potatoes with irresistibly creamy interiors. This version is packed with garlicky sautéed mushrooms and peppers, sweet corn, and punchy quick-pickled red cabbage for the perfect balance of flavors and textures!

Ingredients  

For the Pickled Red Cabbage

  • ▢ 4 1/2 ounces shredded red cabbage (a heaped cup)
  • ▢ 2 tablespoons red or white wine vinegar (cider vinegar will also work)
  • ▢ 1/2 teaspoon sea salt or kosher salt

For the Potatoes

  • ▢ 4 baking potatoes (about 2 pounds), scrubbed
  • ▢ 3 tablespoons extra virgin olive oil
  • ▢ sea salt or kosher salt
  • ▢ 8 ounces cremini mushrooms, halved and sliced
  • ▢ 1 red bell pepper, sliced
  • ▢ 4 garlic cloves, finely chopped
  • ▢ 1/3 cup green olives, pitted and sliced
  • ▢ freshly ground black pepper
  • ▢ 1 tablespoon lemon juice
  • ▢ flat-leaf parsley, finely chopped
  • ▢ Aleppo pepper (optional)
  • ▢ 4 tablespoons salted butter
  • ▢ 1/3 cup grated medium cheddar cheese (about 3 ounces)
  • ▢ 1 cup cooked or defrosted corn kernels

Instructions 

  • Make the Pickled Red Cabbage. Combine the shredded cabbage, vinegar, and salt in a bowl. Grasp and squeeze the cabbage to massage the salt and vinegar in for a minute. Cover and leave in a cool place for at least 1 hour, stirring a few times. You can prepare this ahead and keep it covered in the refrigerator for 1 to 2 weeks in a sealed jar.
  • Prep the potatoes. Place a rack at the center of the oven and preheat it to 425°F, using a convection setting if possible. Use a fork to prick the skin of each potato in 6 places. Rub the exterior of each potato with a little olive oil and sprinkle them with salt. Wrap each one in aluminum foil.
  • Bake the potatoes. Place the foil-wrapped potatoes on a baking sheet and bake them, turning them over halfway through the cooking time, for 1 hour. Remove and discard the foil, then return them to the oven to bake for a further 10 minutes until crispy and fully cooked. Using oven gloves, carefully insert the tip of a paring knife to check whether the potato flesh is tender all the way through; if not, cook for another 5 to 10 minutes. Remove and let cool for a few minutes.
  • Sauté the mushrooms. Meanwhile, heat 4 tablespoons of olive oil in a large, wide pan over a medium–high heat, add the mushrooms, season with salt and pepper, and sauté for 5 minutes, stirring continuously. They will soften and start to brown a little. Using a slotted spoon, transfer the cooked mushrooms to a plate.
  • Sauté the peppers and olives. Add 2 tablespoons of oil to the pan and stir in the bell pepper. Sauté for 4 minutes, stirring often, then add the garlic, olives, and sautéed mushrooms, and season with black pepper. Be mindful of adding extra salt as olives are already salty. Combine well and cook for a further 3 minutes. Add the lemon juice and mix well. Remove the pan from heat and sprinkle with chopped parsley and Aleppo pepper, if you like. Set aside.
  • Mash and season the potatoes. Once the potatoes are cool enough to handle but still hot, slice each potato lengthways through the middle, taking care to not to cut all the way through. Gently push the sides of the potato to gently open each one up. Fluff up the potato flesh with a fork then add a tablespoon of butter to each potato, season with salt and pepper to taste and mash really well (take care not to break the potato skin). Divide the grated cheese among the potatoes and mash again until smooth and creamy.
  • Add toppings and serve. Top each potato with the garlicky mushrooms, peppers, and olives, sprinkle with the corn kernels and some quick-pickled red cabbage and serve immediately.

Notes

  • Note: The potato flesh needs to be hot to be mashed well, so use an oven glove if necessary to hold the potato in one hand while using the other hand to mash the insides with a fork.
  • Make Ahead: Many elements of this kumpir recipe can be prepared ahead of time. You can prepare the garlicky mushroom mixture and pickled red cabbage, as well as any of the additional topping ideas mentioned above.

INGREDIENTS

Serves 4 to 6

Tagine

  • 2 tablespoons olive oil
  • 1.2kg lamb shanks trimmed of excess fat (about 4 small or 3 large shanks) – check notes for other types of meat 
  • 4 large onions (about 800g), chopped
  • 1 tablespoon finely chopped garlic (about 4 cloves)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon salt or more to taste
  • ¼ teaspoon ground black pepper
  • ¼  teaspoon saffron
  • 1 large coriander bouquet, tied
  • Toasted sesame seeds or chopped roasted almonds for garnish

Caramelised prunes

  • 300g soft dried prunes
  • 3 tablespoons honey
  • 1 teaspoon ground cinnamon

METHOD

• In a large casserole, heat the olive oil to medium-high heat and brown the lamb shanks on each side. Make sure the pan is very hot before placing the meat in the pan, you should hear a sizzle when the meat touches the pan, if you don’t, it means the pan is not warm enough. The meat will be naturally released once browned, don’t be tempted to flip it earlier. If you try to flip too early, you will notice that the meat sticks to the pan and you might damage it .

• Remove the browned lamb shanks from the pan and set aside. In the same casserole, place the onions and lower the heat to medium. Cover with a lid and leave the onions until they are soft and translucent, about 10 to 15 minutes. This will allow sweating the onions.

• Once you’ve sweated the onions, place the lamb shanks, the garlic, spices, salt and pepper in the casserole. Pour a cup and half of water (320 ml) in the casserole and place the coriander bouquet on top of the meat. Bring to the boil and cover with a lid over medium-low heat. Leave to simmer gently for 2 hours or until the meat is soft and separates easily from the bone.

• Halfway through cooking, after about 1 hour, reserve ½ cup of liquid from the casserole and set aside. At this stage, if it looks like there is almost no liquid left in the tagine, add a few tablespoons (or 1/4 a cup) of water in the casserole to avoid the tagine from drying out and sticking to the pan. 

• Meanwhile, prepare the caramelized prunes. Transfer the prunes in boiling water for 5 minutes to soften them and drain. Then, in a small deep skillet, transfer the liquids you reserved earlier (½ cup) along with the drained prunes, cinnamon and honey over medium-low heat. Leave to simmer for 5 minutes until the sauce starts to thicken. Set aside until ready to serve. 

• To serve, place the lamb shank and the onion sauce in a plate, arrange the prunes and the syrup (from the prunes) on top. Garnish with toasted sesame seeds or chopped roasted almonds. Enjoy with a side of couscous or crusty bread. 

Notes

•  Any type of slow braising beef or lamb pieces, trimmed of excess fat. will work for this recipe instead of the lamb shanks (i.e. lamb shoulder, lamb or beef neck, beef shin).

Ingredients

  • ▢ 2 tablespoons extra virgin olive oil
  • ▢ 1 tablespoon butter
  • ▢ 1 yellow onion diced
  • ▢ 3 cloves garlic diced
  • ▢ 4 links fresh chorizo or other Spanish sausage cut into chunks
  • ▢ 1 carrot diced
  • ▢ 1 2-inch piece semi-cured chorizo
  • ▢ 1 teaspoon oregano
  • ▢ 1 teaspoon thyme
  • ▢ 1 teaspoon ground cayenne pepper
  • ▢ ¼ cup white wine
  • ▢ 1 can diced tomatoes or a freshly diced medium tomato
  • ▢ 1 tablespoon tomato paste
  • ▢ 3 cups chicken stock
  • ▢ 4-6 cups fresh spinach washed
  • ▢ 2 cans large white beans (alubias extras) drained and rinsed

Instructions

  • Warm the butter and oil in a large pot over medium heat. Add the onions and sauté the onions until they are just browning, about 10 minutes. Add the diced garlic and sauté another minute.
  • Add the fresh chorizo and let the chunks brown on each side.
  • Add the carrot, semi cured chorizo, herbs, and cayenne pepper and stir well, then pour in the white wine and simmer for 1 minute to reduce the wine.
  • Add the chopped tomatoes and tomato paste, and simmer for 2 minutes.
  • Add the 3 cups of chicken stock, then bring to a simmer and cook for 15 minutes uncovered.
  • Add in the fresh spinach and beans, then cover and cook for 10 minutes.
  • Serve hot and enjoy!

Notes

  • Use high quality canned goods, especially for the beans and tomatoes. If you can find Spanish ones, it’s all the better!
  • Use Spanish chorizo if you can find it. Fresh Mexican chorizo is spicier than its Spanish counterpart.
  • This stew keeps in the fridge for 3-5 days, and freezes well for up to 3 months.
