Ingredients

Beans

¾ cup extra-virgin olive oil

1 fennel bulb, cut into ½” dice (about 1½ cups)

3 celery stalks, sliced ½” thick on a bias (about 2 cups)

3 carrots, cut into roughly ½” pieces (about 1½ cups)

1 onion, cut into ½” dice (about 1 cup)

4 garlic cloves, roughly chopped

1 lb. dried gigante or cannellini beans, soaked overnight in cool water and drained

2 Tbsp. fennel seeds

½ oz. dried kelp (4×6″ piece) or 1 Tbsp. smoked dulse flakes

2 bay leaves

Salt

Seaweed Salmoriglio

½ tsp. dried oregano leaves

1 cup chopped parsley

¼ cup chopped mint

1 garlic clove, grated on a Microplane or minced

Zest and juice of 1 lemon (2 to 3 Tbsp. juice)

½ oz. dried kelp, rehydrated in 1 cup water (best if you use the kelp from cooking the beans), chopped

1 cup extra-virgin olive oil (use the oil skimmed from the beans and add more oil as needed to make 1 cup)

Salt

1 tsp. red chile flakes, such as Aleppo

Preparation

Step 1

Heat ¾ cup extra-virgin olive oil in a heavy-bottom stockpot over medium-high heat. Add 1 fennel bulb, cut into ½” dice (about 1½ cups), 3 celery stalks, sliced ½” thick on a bias (about 2 cups), 3 carrots, cut into roughly ½” pieces (about 1½ cups), 1 onion, cut into ½” dice (about 1 cup), and 4 garlic cloves, roughly chopped, and cook for 3–5 minutes, until the vegetables are beginning to brown. Add 1 lb. dried gigante or cannellini beans, soaked overnight in cool water and drained, 2 Tbsp. fennel seeds, ½ oz. dried kelp (4×6″ piece) or 1 Tbsp. smoked dulse flakes, 2 bay leaves, and enough water to cover by 2″. Bring to a simmer and cook until the beans are soft but not falling apart, 1½–2 hours. Season with salt and cool to room temperature, about 1 hour. Discard the bay leaves.

Step 2

Skim off any oil from the surface and remove the kelp (reserving both for the Seaweed Salmoriglio).

Step 3

Serve the beans room temperature or warm with the Seaweed Salmoriglio drizzled over the top.

Combine ½ tsp. dried oregano leaves, 1 cup chopped parsley, ¼ cup chopped mint, 1 garlic clove, grated on a Microplane or minced, zest and juice of 1 lemon (2 to 3 Tbsp. juice), ½ oz. dried kelp, rehydrated in 1 cup water (best if you use the kelp from cooking the beans), chopped, and ¼ cup bean cooking liquid (if you’re making this without the beans, use ¼ cup kelp rehydrating liquid) in the bowl of a food processor and pulse until it forms a chunky paste. If you prefer a smoother texture, continue to process until it’s to your liking. Remove the herb paste to a bowl and whisk in 1 cup extra-virgin olive oil (use the oil skimmed from the beans and add more oil as needed to make 1 cup). Season with salt and 1 tsp. red chile flakes, such as Aleppo.

Notes

The oil first simmers with the beans and is then skimmed off to be used in the sauce to ensure all the flavors are perfectly integrated.

Do Ahead: The sauce will keep in an airtight container in the refrigerator for up to 3 days.

Ingredients

For the filling:

  • 1 tbsp olive oil
  • 1 red onion finely chopped
  • 1 red bell pepper finely diced
  • 1 tsp dried oregano
  • 2 cloves garlic minced
  • 1 tsp hot chilli powder
  • 500 g (18 oz) lean beef mince (ground beef)
  • 400 g (14 oz) canned chopped tomatoes
  • 1 tbsp tomato puree
  • 180 g (6 oz) fresh mozzarella diced

  • 1 sachet fast-action dried yeast 7g / 1 tbsp
  • 350 g (2½ cup) plain white flour (all purpose flour)
  • 1 tbsp olive oil
  • Pinch sea salt flakes
  • 30 g (2 tbsp) salted butter melted

Instructions

Preparing the filling

  • Heat the olive oil in a large pan. Add the onion, red pepper, garlic, oregano and chilli powder. Fry for around 5 minutes until starting to soften. Add the mince and fry for 7 to 10 minutes until browned.
  • Add the chopped tomatoes and tomato puree. Simmer on low for around 5 minutes until any excess liquid has gone (don’t boil, the meat will toughen), then set aside to cool completely.Preparing the dough
  • Meanwhile, in a bowl, mix the yeast with 4 tbsp water and leave to dissolve for 5 minutes. Add 180ml (¾ cup) warm water and all of the flour. Mix until it comes together as a dough.
  • Turn onto floured surface. Knead for about 5 minutes until smooth and springy. Split the dough in four equal balls. Place in a ziplock bag or under cling film to prevent drying out.Putting it all together
  • Preheat the oven to 220C/430F (200C/390F fan). Take a dough ball and roll out to approximately the size of a dinner plate.
  • Divide the cooled filling into quarters. Transfer the dough disc to a floured baking tray and spoon a quarter of the filling onto one side of the round. Sprinkle a quarter of the mozzarella on top.
  • Dab a wet finger around the outer edge of the dough. Fold the dough over and press to seal.

  • Bake in the oven for approximately 15 minutes until golden brown. Brush with melted butter.

  • 1 ½ pounds assorted fresh mushrooms, sliced or chopped into bite-size pieces
  • 2 shallots, diced
  • 3 cloves garlic, minced
  • Kosher salt and freshly ground black pepper, to taste
  • 1 ½ cups arborio rice
  • 1 tablespoon chopped fresh thyme leaves
  • ½ cup dry white wine
  • ½ cup freshly grated Parmesan

  • 6 cups chicken stock
  • Kosher salt and freshly ground black pepper, to taste

  • Melt butter in a large stockpot or Dutch oven over medium high heat. Add mushrooms and shallots. Cook, stirring often, until tender, about 8 minutes.
  • Stir in garlic until fragrant, about 1 minute; season with salt and pepper, to taste. Set aside 1 cup mushroom mixture; keep warm.
  • Stir in rice and thyme, stirring constantly, until lightly toasted and fragrant, about 1-2 minutes.
  • Stir in wine, stirring constantly and scraping any browned bits from the bottom of the Dutch oven, until almost completely absorbed, about 1-2 minutes.
  • Reduce heat to low. Stir in 1 cup stock mixture. Cook, stirring constantly, until almost completely absorbed.
  • Continue adding remaining stock mixture, 1/2 cup at a time, stirring constantly and waiting until almost completely absorbed before adding additional stock mixture, until al dente, about 20 minutes.
  • Stir in Parmesan; season with salt and pepper, to taste.
  • Serve immediately with the reserved mushroom mixture and additional Parmesan, if desired.
