Ingredients

  • 1 package (7 ounces) elbow macaroni
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) Italian tomato sauce
  • 1 large egg
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1-1/2 cups 2% milk
  • 2 tablespoons butter, melted
  • 1 tablespoon minced fresh parsley
  • 1 cup shredded cheddar cheese

Directions

  1. Cook macaroni according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce; heat through.
  2. Drain macaroni; transfer to a greased 13×9-in. baking dish. In a small bowl, combine the egg, soup, milk, butter and parsley; pour over macaroni. Spoon beef mixture over top; sprinkle with cheese.
  3. Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Let stand for 10 minutes before serving.

Ingredients

  • 1 tablespoon canola oil
  • 1 medium onion, chopped
  • 8 ounces smoked sausage, halved and sliced 1/2-inch thick
  • 3 garlic cloves, minced
  • 5 cups chicken broth, divided
  • 2 cups uncooked converted rice
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 rotisserie chicken (about 3 pounds), meat removed and shredded
  • Thinly sliced green onions, optional
  • Hot sauce

Directions

  1. Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat; add oil. When oil is hot, add onion and sausage; cook and stir until sausage is lightly browned. Add garlic; cook 1 minute longer. Press cancel.
  1. Stir in 4 cups broth, rice, salt and pepper. Lock lid and close pressure-release valve. Adjust to pressure-cook on low for 3 minutes. Allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure. Rice should be tender.
  2. Select saute setting; adjust for low heat. Stir in chicken and remaining broth. Cook until chicken is heated through, about 5 minutes. If desired, sprinkle with green onions. Serve with hot sauce.

Ingredients

  • 300g rigatoni
  • 330g long-stemmed broccoli , any larger stems trimmed or halved
  • 6 pork sausages , sausagemeat squeezed from its skins
  • 1 tbsp olive oil
  • 1 tsp chilli flakes
  • 2 garlic cloves , crushed
  • 2 tbsp parsley , leaves picked and finely chopped, stems finely chopped
  • 3 tbsp crème fraîche
  • ½ lemon , zested and juiced
  • 1 red chilli , deseeded and finely sliced

Method

  1. Cook the rigatoni in a pan of boiling salted water following pack instructions, adding the broccoli for the last 3-4 mins until just tender. Drain, reserving a mugful of the cooking water.
  2. Meanwhile, put the sausagemeat and oil in a cold frying pan and cook over a medium heat, stirring often for 6-8 mins until the fat starts to render and the meat is golden and crisp. Remove to a bowl using a slotted spoon.
  3. Stir in the chilli flakes, garlic and parsley stems, and cook for 2-3 mins more until fragrant. Stir through the lemon zest, return the sausagemeat to the pan, then toss in the drained pasta and broccoli. Stir in the crème fraîche, lemon juice and splash of the reserved pasta cooking water, and cook for another minute until everything comes together. Serve in bowls topped with the red chilli slices.
