2 tablespoons all purpose flour
1 1/2 cups whole milk
8 ounces dried beef, sliced and roughly chopped
8 slices sourdough bread, toasted
to taste black pepper, freshly ground

- Melt butter in a small pot over medium heat. Add flour and cook, stirring constantly, until no lumps remain, about 1 minute. Whisk in milk and simmer, stirring occasionally, until sauce thickens, about 4 to 6 minutes.
- Stir in beef and cook until warmed through, about 4 to 5 minutes.
- Place 2 slices of toast on each serving plate. Top evenly with chipped beef mixture. Garnish with pepper and parsley.
