Ingredients

For crust

  • 2 cups crushed Nilla wafers
  • 2 Tbsp. granulated sugar 
  • 5 Tbsp. butter, melted 

For cheesecake

  • 2 (8-oz.) blocks cream cheese, softened
  • 2/3 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • Juice and zest of 1 lemon 
  • 1 tsp. pure vanilla extract 
  • 1 tsp. kosher salt

For topping

  • 4 cups raspberries, divided
  • 1/4 cup granulated sugar
  • Juice of 1/2 lemon
  • Pinch kosher salt

Directions

Step 1

Preheat oven to 350°. Line a 9”-x-9” baking pan with parchment, leaving a 2” overhang. 

Step 2

In a medium bowl, combine crushed Nilla wafers and sugar. Add butter and mix until combined and mixture looks like wet sand. Press into bottom of prepared pan. Bake until lightly golden, about 15 minutes. Let cool while making cheesecake filling.

Step 3

Reduce oven to 325°. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and beat until no lumps remain. Add eggs, one at a time, beating well after each addition. Add lemon juice, zest, vanilla, and salt and beat well. Pour batter over crust and smooth top. Place pan into a larger roasting pan and pour enough boiling water into roasting pan to come halfway up the baking pan. 

Step 4

Bake until only the center is slightly jiggly, 25 minutes. Remove from oven and let cool to room temperature. 

Step 5

Meanwhile, make raspberry topping: In a small saucepan over medium heat, combine 3 cups of raspberries, sugar, lemon juice, and salt. Simmer until raspberries are broken down and sauce is thickened, about 10 minutes. Remove from heat and gently stir in remaining raspberries, trying not break any fresh raspberries. Let cool slightly. 

Step 6

Pour raspberry topping over cheesecake and refrigerate until set, at least 4 hours and up to overnight.  

Step 7

Slice into squares before serving.

Alfredo

To make a delicious alfredo you need to start with high quality ingredients. These ingredients are:

1 cup heavy cream
½ cup freshly grated parmesan cheese
½ cup butter
¼ teaspoon pepper
½ teaspoon salt
1/8 teaspoon nutmeg
1 tablespoon garlic powder (optional)

Directions
1. In a medium saucepan melt butter.
2. Add heavy cream when butter is almost fully melted.
3. Mix butter and heavy cream well.
4. Add grated parmesan cheese, salt, pepper, and nutmeg. Also add garlic powder if wanted.
5.Stir until well mixed.
6. Remove from flame and set aside to thicken.
7. Serve over your favorite pasta.

Tomato Sauce

Ingredients

56 ounces (2 28 oz cans) of tomato puree
2 cloves garlic
1 can of peeled plum tomatoes (28oz)
6 cloves
1 small diced onion
1 teaspoon basil
¼ cup extra virgin olive oil
¼ cup freshly grated Parmesan cheese
1 teaspoon kosher salt
¼ teaspoon pepper
2 tablespoons sugar

Directions
1. Sauté diced onions and garlic in extra virgin olive oil.
2. Pour plum tomatoes into a large bowl and squash with hands.
3. Add all ingredients into a large pot and simmer for three hours.
4. Serve with your favorite dishes or store for later use.

Pesto

Pesto is an amazing Italian sauce that originates from Genoa traditionally consisting of garlic, basil and pine nuts. Making your own pesto at home is quick, easy and only requires a few ingredients that you can find at your local grocery store.

Ingredients

2 cups fresh basil leaves
¼ cup pine nuts
2 garlic cloves
2/3 cups extra virgin olive oil
½ cup freshly grated pecorino cheese
Salt and freshly ground pepper to taste

Directions

1. Add basil, pine nuts and garlic into a food processor.
2. Pulse until coarsely chopped.
3. Add extra virgin olive oil until mixture is smooth.
4. Add salt and pepper to taste.
5. Serve

Creamy Tomato Sauce (Pink Sauce)

Pink sauce is a wonderful variation of the traditional tomato sauce. It is very easy to make and tastes sensational.

Ingredients

1 cup heavy cream
2 tablespoons butter
29 ounces canned peeled plum tomatoes
4 garlic cloves
1 teaspoon oregano
Pinch of sugar
Salt and pepper to taste
1 tablespoon extra virgin olive oil
2 tablespoons Italian seasoning
Parmesan cheese (optional)

Directions
1. In a medium sauce pan sauté in olive oil over a medium flame.
2. Add tomatoes, oregano, salt, pepper, sugar and Italian seasoning into a blender.
3. Pulse until desired texture is achieved. (some prefer a smooth sauce while others do not)
4. Add tomato mixture to sautéed garlic and olive oil.
5. Simmer for 10 minutes on medium low.
6. Wisk in butter and heavy cream.
7. Heat for about ten minutes. Do not allow it to come to a boil.
8. Finish with salt and pepper to taste.
9. Serve over your favorite pasta and finish with Parmesan cheese.

Tortas de la Abuela (Honey Soaked Fried Dough)

Ingredients

For the Fritter Dough

  • ▢ ½ cup extra virgin olive oil like arbequina or Picual; plus more for frying
  • ▢ 1 strip lemon peel
  • ▢ 2 teaspoons anise liquor optional
  • ▢ 2 cups all-purpose flour
  • ▢ ½ cup freshly squeezed orange juice
  • ▢ ½ cup dry white wine
  • ▢ 2 tablespoons baking powder or one packet in Spain

For the Honey Glaze

  • ▢ ½ cup honey or more if needed
  • ▢ 2 tablespoons water
  • ▢ 1 tablespoon sugar optional

Instructions

  • Infuse the olive oil by pouring the olive oil, lemon peel, and liquor into a small saucepan. Slowly heat until the lemon peel begins to brown, then remove from the heat and let it cool completely. Strain out the peel before using.
  • To prepare the dough, combine the flour, baking powder, orange juice, white wine, and infused oil in a large bowl. Mix with a wooden spoon until you can no longer stir it, and then mix with your hands until the dough is evenly combined.
  • Cover the bowl of dough with the dough in plastic wrap and let it rest for 30 minutes.
  • Meanwhile, in another saucepan, slowly heat the honey, sugar, and water, stirring occasionally, until it creates a thick, warm syrup.
  • Knead the dough a few times, then divide the dough into walnut-sized chunks. Roll the chunks into discs until they are thin but not translucent.
  • Heat a frying pan with extra virgin olive oil. Fry each disc in the hot oil until golden on both sides, turning them halfway through. Remove the torta with a slotted spoon and douse it in the hot honey.
  • Remove and place the tortas on a serving plate, making layers as you continue this process.
  • Enjoy these tortas de la abuela while they’re warm and fresh!

Notes

  • Using good quality, extra virgin olive oil (like Picual) is the best option for this recipe. It has a high smoke point and is perfect for frying the tortas.
  • The anise liquor can be omitted if you like, or swapped for a different type of liquor if you prefer.
