Bacon Cheddar Deviled Eggs

Ingredients:

  • 12 eggs
  • ½ cup mayonnaise
  • 4 slices bacon
  • 2 tablespoons finely shredded Cheddar cheese
  • 1 tablespoon mustard

Directions:

  • Step 1Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water.
  • Step 2Meanwhile, place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Alternatively, wrap bacon in paper towels and cook in the microwave for about 1 minute per slice. Crumble and set aside.
  • Step 3Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, crumbled bacon and cheese. Stir in mustard. Fill egg white halves with the yolk mixture and refrigerate until serving.

BACON AND EGG TOAST CUPS

The classic American breakfast all into one muffin! Just layer the bread, bacon and eggs. They are sure to be a crowd-pleaser!

INGREDIENTS:

  • 12 slices bacon
  • 12 whole wheat bread slices
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 4 cups baby kale
  • 2 tablespoons freshly grated Parmesan
  • 12 large eggs
  • Kosher salt and freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh chives

DIRECTIONS:

  1. Preheat oven to 400 degrees F. Line a baking sheet with foil.
  2. Place bacon in a single layer onto the prepared baking sheet. Place into oven and bake until almost crisp, about 6-8 minutes. Transfer to a paper towel-lined plate.
  3. Lightly oil a 12-cup standard muffin tin or coat with nonstick spray. Line each cup with a slice of bread. Place into oven and bake until slightly firm, about 5-6 minutes.
  4. Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in kale until slightly wilted, about 2-3 minutes. Stir in Parmesan; set aside.
  5. Reduce oven to 375 degrees F.
  6. Lay bacon slice in each bread cup; top with kale mixture. Gently crack an egg in each cup; season with salt and pepper, to taste.
  7. Place into oven and bake until egg whites are just set, about 15-20 minutes, or until desired doneness.
  8. Serve immediately, garnished with chives, if desired.

This elegant soup from chef Naomi Pomeroy gets a surprising amount of flavor from sautéed celery. It has great garnishes, too: bacon croutons and a drizzle of lemon oil. Be sure to buy extra-virgin olive oil infused with pure lemon extract.

Ingredients:

  • 6 tablespoons unsalted butter
  • 3 medium leeks, halved and thinly sliced
  • 2 medium onions, finely chopped
  • 3 large garlic cloves, thinly sliced
  • Kosher salt
  • Pepper
  • 12 large celery ribs (2 pounds), trimmed and thinly sliced
  • 4 ounces bacon, finely diced
  • Three 1/2-inch-thick slices of country bread, cut into 1/2-inch dice
  • 1/2 cup crème fraîche or sour cream
  • Lemon olive oil, for drizzling

How to Make It:

Step 1: 

In a large saucepan, melt 4 tablespoons of the butter. Add the leeks, onions, garlic and a generous pinch each of salt and pepper and cook over moderately high heat, stirring, until softened but not browned, about 12 minutes. Add the celery and cook, stirring, until just starting to soften, about 3 minutes. Add 8 cups of water and bring to a boil, then reduce the heat to moderate. Simmer, stirring occasionally, until the vegetables are very tender, 35 to 40 minutes.

Step 2:

Meanwhile, in a large skillet, cook the bacon over moderate heat, stirring occasionally, until browned and crisp, 8 minutes. Using a slotted spoon, transfer the bacon to half of a paper towel–lined baking sheet to drain. Melt the remaining 2 tablespoons of butter in the bacon fat. Add the bread and cook over moderately high heat, stirring, until browned and crisp, 8 minutes. Transfer to the other side of the prepared baking sheet; season with salt and pepper.

Step 3 :  

Working in batches, puree the soup in a blender until smooth. Return the soup to the saucepan, whisk in the cre?me frai?che and season with salt and pepper. Serve hot, topped with the bacon, croutons and a drizzle of lemon olive oil.
