Ingredients

  • 100g Greek-style yogurt
  • 1 lemon , zested and juiced
  • 3 garlic cloves , crushed
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 6 boneless, skinless chicken thighs , cut into bite-sized pieces
  • 350g cabbage & corn slaw (see recipe below)
  • 600g brown butter pilaf (see recipe below)
  • 100ml tahini dressing (see recipe below)
  • 50g harissa sticky onions (see recipe below)
  • 4 tbsp seedy gremolata (see recipe below)

Method

  1. Combine the yogurt, lemon zest and juice, the garlic, olive oil, dried oregano, cumin and paprika, and season well. Mix in the chicken thighs and leave to marinate for at least 1 hr or overnight.
  2. When ready to cook, heat the grill to high. Thread the chicken onto metal skewers, shaking off any excess marinade, and arrange on a baking tray. Grill for 12-15 mins, turning often until charred slightly and cooked through.
  3. Meanwhile, combine the slaw, pilaf, dressing and onions in a large bowl, then divide between plates. Remove the chicken from the skewers, then scatter over the salad. Top with the gremolata.

Equipment

Ingredients  

  • 24 ounces cherry tomatoes
  • 1 cup fresh basil chopped
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon onion powder
  • 2 teaspoons minced garlic
  • 5.2 ounces Garlic and Fine Herbs Boursin Cheese
  • 2-3 tablespoons olive oil
  • 20 ounces cheese tortellini

Instructions 

  • Pre-heat the oven to 400° F.
  • Add whole tomatoes and chopped fresh basil to a 8×8 inch casserole dish.
  • Sprinkle salt, pepper, onion powder and minced garlic over the dish.
  • Place unwrapped Boursin Cheese on top of tomatoes and basil.
  • Drizzle entire dish with olive oil and place in the oven to bake uncovered for 25-30 minutes.
  • In the last 8-10 minutes of bake time begin cooking the tortellini pasta according to the package directions. Drain off excess water and set cooked pasta aside.
  • Remove casserole dish from the oven. Use a wire masher to break up and mash tomatoes and Boursin Cheese to create a sort of sauce.
  • Add cooked tortellini pasta to the casserole dish and give everything a good stir.
  • Top with fresh parmesan if desired and serve while hot
