Boursin and Tomato Pasta

Easy-to-make and packed with flavor, tender tortellini coated in a creamy sauce made from roasted tomatoes, tangy cheese, caramelized garlic and fragrant basil is a mealtime favorite.

- 24 ounces cherry tomatoes
- 1 cup fresh basil chopped
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon onion powder
- 2 teaspoons minced garlic
- 5.2 ounces Garlic and Fine Herbs Boursin Cheese
- 2-3 tablespoons olive oil
- 20 ounces cheese tortellini
Instructions
- Pre-heat the oven to 400° F.
- Add whole tomatoes and chopped fresh basil to a 8×8 inch casserole dish.
- Sprinkle salt, pepper, onion powder and minced garlic over the dish.
- Place unwrapped Boursin Cheese on top of tomatoes and basil.
- Drizzle entire dish with olive oil and place in the oven to bake uncovered for 25-30 minutes.
- In the last 8-10 minutes of bake time begin cooking the tortellini pasta according to the package directions. Drain off excess water and set cooked pasta aside.
- Remove casserole dish from the oven. Use a wire masher to break up and mash tomatoes and Boursin Cheese to create a sort of sauce.
- Add cooked tortellini pasta to the casserole dish and give everything a good stir.
- Top with fresh parmesan if desired and serve while hot
