BBQ Chicken Quesadillas

These BBQ Chicken Quesadillas are one of the most favorite go-to easy dinners. They’re loaded with tender chicken, tangy bbq sauce, tender veggies, melty cheese, and a little crunch from the tortilla. It all gets cooked up to golden, crispy perfection that comes together fast, and tastes amazing!

Ingredients  

BBQ Chicken Quesadillas

  • olive oil
  • 1 cup diced red onion
  • 1 cup bacon bits (or cooked and crumbled bacon)
  • 3 cups cooked and shredded chicken (rotisserie chicken works great)
  • 1/2 cup BBQ sauce
  • 6 large flour tortillas
  • 4 cups shredded cheese (I like a mix of mozzarella, cheddar, and pepper jack)
  • 1/4 cup fresh cilantro (chopped)

Instructions

  • Add a little oil to a large skillet over medium heat. Add the red onion and cook for a couple minutes until the onion starts to soften. olive oil, 1 cup diced red onion
  • Add in the bacon bits and cook for a couple more minutes until it crisps up. 1 cup bacon bits
  • Add the chicken, and bbq sauce to the pan and mix it all together. Scoop into another bowl and set it aside. 3 cups cooked and shredded chicken, 1/2 cup BBQ sauce
  • Add a little more oil to the pan and add in a large tortilla. 6 large flour tortillas
  • Sprinkle a little shredded cheese over half of the tortilla, then a scoop of the chicken mixture. Add a couple more Tablespoons of cheese over the mixture. Sprinkle with cilantro. 4 cups shredded cheese, 1/4 cup fresh cilantro
  • Fold the tortilla in half and let it cook on the bottom side until golden, 1 to 2 minutes. Flip and continue cooking on the other side until the tortilla is golden, and the inside is warm and melted.
  • Repeat with additional tortillas and filling.
  • Let the quesadillas sit for about 2 minutes, then slice and serve with sour cream, and more bbq sauce if desired.

Ingredients

  • ½ celery stick, cut into small chunks
  • 1 small carrot, cut into small chunks
  • 500g boneless skinless chicken thighs, cut into chunks
  • a few chives, snipped
  • oil, for greasing
  • boiled rice
  • steamed broccoli

Method

  1. Heat oven to 200C/180C fan/gas 6. Blitz the celery, carrot, chicken and chives in a food processor until finely chopped. You may need to use a spatula to scrape the sides of the bowl a few times.
  2. Shape into small meatballs. If freezing, space out on a tray and put in the freezer. Once frozen, transfer to a freezer bag and take them out when needed. Defrost thoroughly in the fridge before cooking.
  3. To cook, put on a baking tray lined with greased foil and bake for 10 mins or until browned and cooked through.
  4. Served with boiled rice and steamed broccoli.

If your family are partial to stronger flavours, serve with a little chilli or soy sauce for adults and older kids.

  • 100g of unsalted butter
  • 1500g of plain flour
  •  75g of walnuts – make sure that you chop around 25g

  • Three medium sized eggs
  • 150ml of single cream
  • 5g of fresh thyme
  • 50g of Parmesan

  • Next, you can tip that on a floured surface, so that you can prepare the soft dough. You can flatten them to make a disc and then transfer to the fridge for 30 minutes.
  • In the meantime, you should preheat your oven to a temperature of 200 Celsius. You should heat up your oil in a frying pan. Then you can cook the mushrooms for around 10 minutes. You can then add thyme and garlic and continue to cook for one more minute. You can season it and set aside.
  • Now you can roll out the pastry on the floured surface and cut them into relatively large circles. You will be able to use the tart case. You can then scrunch up the pieces and fill the tin along with baking beans. You can bake this for around 15 minutes. Then you will be able to remove paper and beans and continue for five more minutes. This can provide golden color pastry.
  • You can beat three more eggs, Parmesan, milk, and cream. You can also arrange mushrooms within the tart case and pour that over the egg mixture. You can top this with prosciutto slices and the remaining walnuts you have. You should bake them for a period of 50 minutes.

You can now take it out of the oven and allow them to cool for a period of 30 minutes before you serve.
