Ingredients

  • ▢1 teaspoon olive oil
  • ▢2 teaspoons garlic minced, or 2 large cloves garlic, minced
  • ▢250 g grape tomatoes
  • ▢1/2 cup fresh basil leaves stems removed, finely sliced or shredded
  • ▢1 pinch salt to season – optional
  • ▢8 eggs large
  • ▢1/4 cup unsweetened almond milk or skim/low fat milk
  • ▢1/2 cup baby spinach leaves pre washed and ready to use
  • ▢3 ounces mozzarella cheese fresh, slice thinly into rounds
  • ▢2 tablespoons grated mozzarella cheese optional
  • ▢1 drizzle balsamic glaze

Instructions 

  • Preheat your oven to broil or grill setting on medium heat.
  • Slice tomatoes in half horizontally. Heat oil in an 8-inch non stick pan or skillet over medium-high heat. Once hot, add the garlic, stirring while it cooks for about one minute until fragrant. Add the tomato slices and basil. Continue cooking until the tomatoes are becoming slightly blistered and soft.
  • While the tomatoes are frying: whisk the eggs, milk and a pinch of salt together in a medium-sized bowl until well combined. When tomatoes are ready, transfer HALF of the tomato mixture onto a warmed plate; cover and set aside.
  • Pour the egg mixture into the remaining tomatoes in the pan, stirring the tomatoes around through the eggs (for about 20 seconds) to mix the flavours through.
  • Reduce heat to low-medium; add in the spinach leaves and arrange the mozzarella slices evenly over top, pressing them down slightly into the egg, and cook until the eggs are almost set (the centre will be slightly runny). It takes about 8 minutes (approximately).
  • Sprinkle the extra cheese (if using) over the top and transfer pan/skillet into the preheated oven. Grill/broil until the top is golden, puffed up and cooked through. The edges and the bottom of the frittata will be golden.
  • To serve, warm the remaining tomatoes and basil mixture, and spoon over the top. Drizzle with the balsamic glaze.

Notes

We recommend using fresh mozzarella both grated and sliced into rounds for the best consistency.

  • 1 3 inch Heart shaped cookie cutter
  • 1 4 inch Heart shaped cookie cutter
  • 1 pastry brush
  • 1 Sheet Pan

Ingredients

  • ▢2 sheets Butter Puff Pastry thawed, but kept cold approx 18 oz (510g) 12.5″ x 10″. (32cm x 25cm)
  • ▢1 Chicken Breast diced into ½ inch cubes approx 12 oz (350g)

The Sauce

  • ▢½ tsp Chilli flakes
  • ▢½ tbsp Garlic minced
  • ▢1 tsp oregano
  • ▢¼ tsp onion powder
  • ▢2 tbsp white wine
  • ▢⅓ cup sun-dried tomatoes chopped
  • ▢⅓ cup heavy cream
  • ▢⅓ cup parmesan cheese shredded
  • ▢1 pinch salt
  • ▢1 pinch pepper

Egg wash

  • ▢2 egg yolk
  • ▢1 tbsp milk

Instructions 

  • Pan fry chicken until golden. Add chilli flakes, garlic, oregano, onion powder, and wine. Simmer for 1 min until alcohol evaporates.
  • Stir in sun-dried tomatoes, cream, parmesan, salt, and pepper. Simmer until thick (2 mins). Let cool completely (crucial so the pastry doesn’t melt!).
  • Lay one sheet of puff pastry on parchment paper.
  • Lightly press a 3-inch heart cutter onto the pastry to make 4 outlines (do not cut through the dough, these are just guides).
  • Place a heap of filling (approx. 2 tbsp) in the center of each outline. Brush a little water around the filling.
  • Place the second pastry sheet on top. Gently press down around the filling heaps to remove air pockets. Using a larger 4-inch heart cutter, center it over a mound and cut firmly through both sheets to create your sealed heart pocket. Repeat for all 4.
  • Prick a small steam vent in the center with a toothpick and brush with egg wash. Bake at 370°F (190°C) for 35–40 mins or until puffed and golden (check 20 mins in as ovens and puff pasty vary).
  • Serve warm with sour cream and chilli sauce.

Notes

  • Pastry Tip: Keep your puff pastry cold! If it starts getting sticky while you work, pop it back in the fridge for 10 minutes.
  • Cool The Filling: Make sure your chicken mixture is completely cool before spooning it onto the pastry, or you’ll end up with soggy bottoms.
  • Shortcut: In a rush? Use shredded rotisserie chicken and just toss it with the sauce ingredients.
  • Make Ahead: You can assemble these, freeze them raw on a baking sheet, then bag them up. Bake from frozen (just add 3-5 minutes to the cooking time).
  • Reheating: Air fry or oven bake leftovers to get the crunch back. The microwave will make them soft!

Chocolate-Covered Strawberry Jell-O Shots

Why make regular ole chocolate-covered strawberries when you can make chocolate-covered strawberry JELL-O SHOTS? Perfect for everything from Galentine’s celebrations to romantic nights in, these adorable shots are boozy, but not overly so. Skip the champagne this Valentine’s, and go for these bites where you get your drink and dessert in one!

Ingredients

  • 3 lb. fresh large strawberries
  • 2 cups semisweet chocolate chips
  • 2 tsp. coconut oil
  • 1 cup boiling water
  • 1 (3-oz.) box strawberry Jell-O
  • 1 cup vodka

Directions

Step 1

Slice off tops and tips of strawberries, leveling them so they can stand up on a flat surface. Using a small melon baller or ⅛- to ¼-tsp. measuring spoon, gently scoop out inside of each strawberry, creating a “shot glass,” being careful not to scoop all the way through. Discard insides.

Step 2

In a medium microwave-safe bowl, microwave chips and oil in 30-second increments, stirring between each, until melted and smooth, about 90 seconds total.

Step 3

Dip bottoms of strawberries into chocolate and arrange cup side up on a parchment-lined baking sheet. Refrigerate until hardened, about 10 minutes.

Step 4

Meanwhile, in a large bowl, whisk boiling water and Jell-O until dissolved. Add vodka and whisk to combine.

Step 5

Carefully divide Jell-O mixture among strawberry cups. Refrigerate until firm, at least 3 hours and up to 6.

Notes:

Better with vodka, but you should be able to make these with any type of liquor. Strawberry Jell-O is the obvious choice, but feel free to switch it up. Semisweet chocolate tastes the most classic, but dark or bittersweet should work too. The coconut oil might seem unnecessary, but we recommend not skipping it—it will help the chocolate melt more smoothly and set up nice and glossy.
