Ingredients

Tofu

  • 20 oz extra firm tofu, preferably high protein
  • 2 1/2 Tbsp avocado oil or light olive oil
  • 3 Tbsp cornstarch, divided
  • Sliced green onions and toasted sesame seeds, for garnish

Teriyaki Sauce

  • 1/4 cup water
  • 1 1/2 tsp cornstarch
  • 1/4 cup low sodium soy sauce
  • 2 Tbsp mirin
  • 1 1/2 Tbsp maple syrup or honey
  • 1 1/2 Tbsp brown sugar
  • 1 Tbsp rice vinegar
  • 1/4 tsp toasted sesame oil
  • 2 tsp peeled and minced fresh ginger
  • 2 tsp minced fresh garlic

Instructions

  1. Cut tofu into 1-inch chunks. Line a 18 by 13-inch baking sheet with two layers of paper towels. Spread tofu over paper towels and let drain for 15 minutes while you prepare the sauce.
  2. For the sauce in a mixing bowl whisk together water with 1 1/2 tsp cornstarch. Add in soy sauce, mirin, maple syrup, brown sugar, rice vinegar, sesame oil, ginger and garlic and whisk until blended.
  3. Lay another layer of paper towels over tofu and gently press to remove more moisture. Pull the paper towel from underneath the tofu, leaving the tofu on the now bare baking sheet and placing the tofu fairly close together.
  4. Dust 1 1/2 Tbsp cornstarch over tofu, turn and dust opposite side with 1 1/2 Tbsp tofu and gently toss.
  5. Heat oil in a 12-inch non-stick skillet over medium-high heat. Cook tofu until golden brown all over, about 10 minutes (be careful it may splatter a bit as it cooks so stand back).
  6. Transfer tofu to baking sheet lined with a paper towel to drain.
  7. Let pan cool off heat briefly (about 15 seconds) then return to medium-low heat, whisk soy sauce mixture once more and pour into pan. Cook and whisk until thickened, about 30 seconds.
  8. Add tofu and cook about 20 seconds longer until sauce is thick and tofu is coated.
  9. Serve right away garnished with green onions and sesame seeds.

Ingredients

  • 2 1/2 cups Cherry Coke
  • 3 cherry Popsicles, plus more for garnish (optional)
  • 3 oz. tequila
  • 2 oz. fresh lime juice
  • 1 oz. amaretto
  • 1 oz. cherry juice
  • Lime wheels and maraschino cherries, for garnish

Directions

Step 1

Divide Cherry Coke between 2 ice cube trays. Freeze until solid, 3 to 4 hours.

Step 2

Transfer frozen Coke to a blender. Add cherry Popsicles, tequila, lime juice, amaretto, and cherry juice and blend until ice is broken down and a slushie consistency forms.

Step 3

Divide slushie between glasses. Garnish with a lime wheel, maraschino cherry, and more Popsicles (if using).

Tip:

Best to used cherry Popsicles and cherry juice to amp up the flavor of the Cherry Coke, which is cut perfectly by the lime, tequila, and amaretto.

Ingredients

  • 4 Tbsp. coconut oil, divided
  • 2 (15.5-oz.) cans chickpeas, drained, rinsed, divided
  • 1 large yellow onion, thinly sliced into half-moons
  • 1/2 cup water, divided
  • 1 Tbsp. finely grated or minced garlic (from 4 to 5 cloves)
  • 1 Tbsp. finely grated or minced peeled ginger (from a 1″ piece)
  • 1 tsp. ground cumin
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground turmeric
  • 1/4 tsp. to 1/2 tsp. cayenne pepper
  • 1 Tbsp. tomato paste
  • 1 (13.5-oz.) can unsweetened coconut milk
  • 1 1/2 tsp. light brown sugar
  • 1/4 tsp. baking soda
  • Kosher salt
  • Juice of 1 lime
  • Cooked white rice and torn fresh basil, for serving

Directions

Step 1

In a large skillet over medium-high heat, heat 2 Tbsp. oil. Add 1 can chickpeas and cook, stirring occasionally and reducing heat as needed to avoid burning, until golden brown and crisp, 3 to 4 minutes. Transfer chickpeas to a medium bowl. Repeat with remaining 2 Tbsp. oil and chickpeas.

Step 2

In same skillet over medium heat, combine onion and 1/4 cup water and cook, stirring occasionally, until onion is softened, 7 to 10 minutes.

Step 3

Add garlic, ginger, cumin, cinnamon, turmeric and cayenne (to taste) and cook, stirring, until fragrant, about 1 minute. Add tomato paste and cook, stirring frequently, until paste is slightly darkened, about 2 minutes. Pour in milk and stir to combine. Add brown sugar, baking soda, crisped chickpeas, and remaining 1/4 cup water. Bring to a boil, scraping browned bits from bottom of pan. Reduce heat to medium-low, bring to a simmer, and cook, stirring occasionally, until sauce thickens and flavors have melded, about 10 minutes.

Step 4

Remove from heat; season with salt. Stir in lime juice.

Step 5

Divide rice among plates or shallow bowls. Spoon chickpeas and sauce over. Top with basil.

Storage:

The chickpeas can be made 3 days ahead. Store in an airtight container and refrigerate. Gently reheat, adding a few splashes of water to loosen as needed.
