Dilled Egg Salad is a healthy eggetarian salad recipe. Simple and easy-to-make, this salad recipe is ideally served at room temperature. As the name suggests, the main ingredients used in this salad recipe are eggs and dill leaves, whereas mayonnaise is used for dressing. This quick-to-make salad is rich in proteins from boiled eggs and is filling too. This delicious salad would be liked by adults and kids alike. You can serve it as a spread on bread or on lettuce leaves. Try it.

Ingredients of Dilled Egg Salad:

  • 1 tablespoon mayonnaise
  • 8 egg
  • 1/2 cup dijon mustard
  • 1 medium onion
  • black pepper as required
  • salt as required
  • 1 teaspoon dill leaves

How to make Dilled Egg Salad:

  • Step 1Take eggs in a deep pan and cover them with water. Boil the eggs for 10 to 12 minutes, remove from heat and let the eggs stand in hot water for 2-3 minutes. Now, cool the boiled eggs, peel and chop them.
  • Step 2Finely chop the onions and keep them aside in a bowl.
  • Step 3Now take a large bowl and mash the boiled eggs in it using a fork or a wooden spoon. Add mayonnaise, dijon mustard, dill leaves, onion, salt and black pepper and mix them well. Dilled Egg Salad is now ready. Garnish with two pieces of boiled egg and coriander.

INGREDIENTS :

6 large eggs
1 c. half-and-half
1 tsp. kosher salt
1/2 tsp. Freshly ground pepper
2 c. sweet potatoes
2 tbsp. olive oil
2 c. firmly packed chopped kale
1/2 small Red Onion
2 clove garlic

3 oz. goat cheese

DIRECTIONS:

Preheat oven to 350 degrees F. Whisk together eggs and next 3 ingredients.
Sauté sweet potatoes in 1 tablespoon hot oil in a 10-inch ovenproof nonstick skillet over medium heat 8 to 10 minutes or until potatoes are tender and golden; remove and keep warm. Sauté kale and next 2 ingredients in remaining 1 tablespoon oil 3 to 4 minutes or until kale is wilted and tender; stir in potatoes. Pour egg mixture evenly over vegetables, and cook 3 more minutes. Sprinkle egg mixture with goat cheese.
Bake at 350 degrees F 10 to 14 minutes or until set.
