Ingredients

Graham Cracker Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 Tbsp sugar
  • 1 pinch fine sea salt

Cheesecake Filling

  • 32 ounces cream cheese, softened
  • 1 1/4 cups sugar
  • 5 large eggs, room temperature
  • 2 Tbsp sour cream
  • Zest of 1 lemon, plus more for garnish
  • 1 Tbsp lemon juice
  • 1 1/2 tsp vanilla extract
  • 1/8 tsp fine sea salt
  • 12 oz raspberries*, plus more to garnish

Instructions

  • Prep the pan – Preheat oven to 350°F. Brush a 9×13-inch metal baking pan lightly with butter to help the parchment stick. Line with parchment paper, leaving overhang on the sides for easy lifting.
  • Make the crust – In a bowl, stir together the graham cracker crumbs, sugar, and salt. Then stir in melted butter and mix until evenly moistened. Press firmly into the bottom of the prepared pan. Bake for 8 minutes. Remove and let cool. Reduce oven temperature to 325°F.
  • Make the filling – In the bowl of a stand mixer with the paddle attachment (or a large mixing bowl with an electric mixer), beat the cream cheese and sugar on high speed with the paddle attachment for 5 minutes, or until smooth and fluffy, scraping down the bowl as needed for a smooth mixture.
  • Finish the filling – Reduce the speed to medium and add the eggs one at a time. Add the sour cream, lemon zest, lemon juice, vanilla, and salt, and mix just until smooth, scraping down the bowl as needed.
  • Add raspberries – gently fold in raspberries until evenly distributed. Pour the filling over the cooled crust and spread evenly. Tap the cheesecake on the counter a few times to release bubbles then pop them with a toothpick.*
  • Bake at 325˚F for 45-50 minutes, until the center is nearly set and has a slight wobble when you jolt the pan. Let cool in the pan to room temperature, about 2 hours, then cover with foil and refrigerate for at least 4 hours* or until fully chilled. Avoid covering with plastic wrap, which can cling to and ruin the top of the cheesecake.
  • Serve – Carefully lift the chilled cheesecake out using the parchment overhang. Slice into bars and serve garnished with fresh raspberries and lemon zest ribbons.

Notes

*Dry raspberries – Make sure raspberries are thoroughly patted dry with paper towels to avoid adding excess water to the cheesecake.

*Release air bubbles – Tapping the baking dish on the counter a few times can help release bubbles to the surface. Popping the bubbles with a toothpick can prevent cracks in the top of your cheesecake.

*Chill overnight for the neatest slices and wipe the knife between cuts for cleaner bars.

Storage and Make Ahead – Once the cheesecake bars are  baked, cool to room temperature before storing

  • To Refrigerate – cover and refrigerate for up to 4-5 days. Add the fresh raspberries and lemon zest garnish just before serving.
  • To Freeze – Wrap the bars in an airtight, freezer-safe container, or with foil to prevent drying out. Freeze for up to 3 months, and then thaw overnight in the fridge. Garnish before serving.

Ingredients

Strawberry Syrup (Optional):

  • ▢8 oz strawberries fresh and ripe, hulled, trimmed and washed
  • ▢1/3 cup sugar
  • ▢1/4 cup water

Sangria:

  • ▢750 ml pink moscato bottle, chilled, sparkling or any rosé
  • ▢1/2 cup limoncello
  • ▢1 cup frozen raspberries or fresh if you don’t have frozen
  • ▢1 cup frozen strawberries hulled and halved
  • ▢1/2 cup frozen blueberries
  • ▢1 handful mint leaves washed
  • ▢1 lemon thinly sliced, seeds discarded

Instructions 

  • To prepare syrup, combine strawberries, sugar and water in a small saucepan on medium heat. Bring to a boil while stirring occasionally until sugar dissolves. Remove from heat, cover and allow to cool to room temperature. Press the syrup through a mesh sieve in small batches and discard pulp and seeds.
  • Combine 1/4 cup of the strawberry syrup with the moscato, limoncello, berries, mint leaves, lemon slices in a large pitcher.
  • Pour the sangria into ice-filled stemware. Scoop some fruit into each glass and garnish with a strawberry, slotted onto the edge of the glass.

Notes

The Strawberry Syrup in this recipe is optional. It does make this Sangria sweet. Leave it out if you’re happy with the sweetness of the Limoncello and the Moscato!

Ingredients 

  • 4 lobster tails, 5 to 6 oz each
  • 1 Tbsp fresh parsley, very finely chopped, plus more for garnish
  • 2 garlic cloves, pressed
  • 1 tsp dijon mustard
  • 1/4 tsp fine sea salt
  • 1/8 tsp freshly cracked black pepper
  • 1 1/2 Tbsp olive oil
  • 1 1/2 Tbsp fresh lemon juice
  • 4 Tbsp unsalted butter, divided

Instructions

How to Prepare/Butterfly Lobster Tails:

  • Cut the Shell: Use kitchen scissors to cut through the top shell of the lobster tail, stopping at the base of the tail and snipping through the top portion of the meat as you go.
  • Crack the Ribs: Flip the tail over to the back see-through side and crack the ribs in the center. This will help open the shell.
  • Butterfly: Open the shell carefully using thumbs and fingers and loosen meat from the shell (remove vein if present). Lift the meat from the shell, keeping it attached at the base. Press the shell together and set the lobster meat over the top. Most of the lobster meat should be sitting on top of the shell.

How to Make Broiled Lobster Tails:

  • Prep: Place rack in upper third or center of the oven so the meaty tops of your lobster tails will be at least 6 inches from the top heating element. Preheat oven to broil on high heat.
  • Make the Sauce: In a small bowl, stir together marinade ingredients: 1 Tbsp parsley, 2 garlic cloves, 1 tsp dijon, 1/4 tsp salt, 1/8 tsp pepper, 1 1/2 Tbsp olive oil and 1 1/2 Tbsp lemon juice.
  • Arrange: Place butterflied Lobster Tails into a 9×13 or 8×12 roasting pan. Divide marinade evenly over the tops of each lobster tail and dot each tail all over with 1/2 Tbsp of butter cut into smaller pieces.
  • Broil lobster tails on high heat 10-11 min (or according to the lobster tail size – see chart). When done, lobster meat should be opaque and white in the center and register 145˚F on an instant read thermometer. Transfer to serving platter and garnish with parsley if desired.
  • To make the Garlic Lemon Butter: drain drippings from the roasting pan into a small saucepan and combine with remaining 2 Tbsp butter, bring to a simmer and remove from heat. Pour over lobster tails or divide into ramekins and use as dipping sauce.

Notes

Broiling Times for Lobster Tails:

Broil lobster meat according to the timings below until opaque and white in center, and is slightly firm to the touch, or 145˚F.

  • Smaller (3 to 4 oz) lobster tail 6 to 8 minutes
  • Medium (5 to 6 oz) lobster tail 10-11 minutes
  • Larger (7 to 9 oz) lobsters tail 12-15 minutes (with rack in the middle of the oven)
