Ingredients

Chicken salad

  • 2 1/2 cups cooked diced boneless skinless chicken breasts, chilled
  • 1 cup small grapes, halved
  • 3/4 cup diced celery
  • 1/2 cup Fisher Sliced Almonds
  • 1/3 cup chopped green onions
  • 3 Tbsp chopped cilantro (optional)

Dressing

  • 2/3 cup plain fat-free Greek yogurt
  • 3 Tbsp full fat mayonnaise
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp honey
  • 1 tsp ground coriander
  • 3/4 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/4 tsp (heaping) turmeric
  • 1 pinch ground cardamom or nutmeg, and cayenne pepper
  • Salt and freshly ground black pepper

Instructions

  • In a small mixing bowl, whisk together Greek yogurt, mayonnaise, lemon juice, honey, coriander, cumin, ginger, turmeric, cardamom and cayenne pepper. 
  • Season dressing with salt and pepper to taste.
  • Add chicken, grapes, celery, almonds, green onions and cilantro to a large bowl, then pour dressing over top.
  • Toss to evenly coat. Serve in lettuce, whole wheat tortillas, croissants, bread, etc.

Notes

  • Homemade chicken salad can be made up to a day in advance and keeps well in the fridge.
  • This chicken salad recipe can easily be doubled to feed a crowd.

Ingredients

¼ cup reduced-sodium soy sauce (or tamari for gluten-free)

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon Sriracha sauce (or to taste)

1 tablespoon grated fresh ginger

1 tablespoon minced garlic

1 pound wild salmon fillet, cut into 4 (4-ounce) pieces

1½ teaspoons sesame oil

2 tablespoons finely chopped scallions, for garnish

Preparation

Step 1

In a 1-gallon zip-top plastic bag, combine the soy sauce, honey, vinegar, Sriracha, ginger, and garlic. Add the salmon, toss to coat evenly, and refrigerate for at least 1 hour, or up to 8 hours, turning the fish once.

Step 2

Remove the salmon from the bag, reserving the marinade. Heat a large sauté pan over medium-high heat and add the sesame oil. Rotate the pan to coat the bottom evenly and add the salmon. Cook until one side of the fish is browned, about 2 minutes. Flip the salmon and cook until the other side browns, 2 more minutes. Reduce the heat to low and pour in the reserved marinade. Cover and cook until the fish is cooked through, 4 to 5 minutes.

Step 3

Place a piece of salmon on each of 4 serving plates and sprinkle with the scallions.

Notes

This is perfect served with zucchini noodles. Use a spiralizer or mandoline fitted with a julienne blade to cut the zucchini into spaghetti-like strands, then sauté them with a little sesame oil and garlic for 2 minutes

Ingredients:

Tzatziki Sauce

1 1/4 cup plain greek yogurt, seperated 2 tablespoons fresh dill, minced 2 cloves garlic cloves, minced 1 lemon, juiced 1/3 cup cucumber, diced

Meatballs

1 pound ground turkey 1/2 cup panko bread crumbs 1 egg 1/4 cup red onion, minced 1 clove garlic, minced 1/2 teaspoon oregano, dried 1 teaspoon ground cumin 1 teaspoon salt 1 teaspoon ground black pepper 2 tablespoons olive oil

Garnishes

White rice Cucumber, diced Red onion, diced Tomato, diced Feta cheese, crumbled

Directions:

Tzatziki Sauce

  1. In a medium bowl, combine 1 cup yogurt, dill, 2 cloves of garlic and lemon juice and stir until combined. Remove 1/4 cup of mixture from the bowl and set aside. Fold cucumber into the remaining ingredients in the bowl until evenly mixed. Set sauce aside. 

Meatballs

  1. In a large bowl, combine ground turkey, breadcrumbs, egg, onion, remaining clove of garlic, oregano, cumin and salt and pepper. Add in reserved 1/4 cup of yogurt mixture. Mix until just combined using a spatula or your hands. Form into 12 meatballs. 
  2. Heat a large, heavy- bottom skillet with olive oil over medium heat. Add meatballs in batches and cook for 7-8 minutes, turning periodically to ensure even browning on all sides. Once meatballs reach 165 F degrees, transfer to a plate. Continue until all meatballs are cooked.

Garnishes

  1. Serve meatballs over a bowl of cooked rice and garnish with red onion, cucumber, feta cheese and a dollop of Tzatziki sauce as desired.
