Carrot Cake Baked Oatmeal

Breakfast just got so much better with this cake inspired Carrot Cake Baked Oatmeal! It’s made with nutritious and filling rolled oats, crunchy pecans, sweet spices, shredded carrots and it’s finished with a honey cream cheese icing. A fun spring themed dish fit for a weekend brunch or great for a make ahead breakfast.

Ingredients

Dry Mixture

  • 2 1/2 cups (220g) rolled oats (old fashioned not quick)
  • 1/2 cup chopped (55g) pecans or walnuts
  • 1 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground dried ginger

Wet Mixture

  • 1/3 cup (98g) real maple syrup
  • 1/3 cup unsweetened applesauce
  • 2 Tbsp avocado oil or olive oil
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 cups milk (preferably 2% or whole)
  • 1 cup (slightly packed, 150g) finely grated carrots (about 2 medium large)

Honey Cream Cheese Icing

  • 3 oz cream cheese, softened
  • 3 Tbsp honey (or more to taste)

Instructions

  • Heat oven to 350 degrees. Spray a 9 by 9-inch baking dish with non-stick cooking spray and set aside.
  • In a large mixing bowl toss together oats, pecans, baking powder, cinnamon, nutmeg and ginger.
  • In a separate large mixing bowl whisk together maple syrup, applesauce, avocado oil, eggs, vanilla and salt whisking until well combined. Pour in milk and add carrots and whisk.
  • Pour oat mixture into milk/carrot mixture and whisk to combined. Pour mixture into prepared baking dish and spread into an even layer (so the oats and carrots appear evenly spread out and not heaped).
  • Bake in preheated oven until set in the center and 35 to 40 minutes. Let cool on a wire rack 15 minutes before slicing.
  • In a medium mixing bowl using an electric hand mixer whip together the cream cheese and honey for several minutes until its nice and fluffy.
  • Serve warm slices of carrot cake baked oatmeal with a fair drizzle of the cream cheese icing. If anyone would like it any sweeter just serve with a little extra honey drizzled over.
  • Store the oatmeal covered in the fridge for up to 5 days.

Everything Bagel Dip

And utterly tempting and completely satisfying dip! Made with a rich cream cheese and tangy sour cream base blended with a homemade everything bagel seasoning. It’s a party staple.

Ingredients

  • 8 oz. cream cheese, softened
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1 1/2 Tbsp minced dried onion
  • 1 Tbsp poppy seeds
  • 2 tsp toasted white sesame seeds
  • 2 tsp black sesame seeds (or more toasted white sesame seeds)
  • 1 tsp garlic powder
  • 1/4 tsp kosher salt, then more to taste

Instructions

  • In a large mixing bowl using an electric hand mixer whip cream cheese until fluffy, about 2 to 3 minutes.
  • Add in sour cream and mayonnaise and blend to combined.
  • In a small bowl toss together minced dried onion, poppy seeds, white sesame seeds, black sesame seeds and garlic powder, set aside 1 tsp for garnish then pour remainder in with cream cheese mixture and mix.
  • Season mixture with kosher salt to taste (you can also add a little pepper to if desired). Garnish with remaining 1 tsp bagel seasoning mixture.
  • Serve with bagel chips, crackers, chips or veggies. Store dip in fridge for up to 1 week. You can thin with a little milk if desired.

Notes

To make homemade bagel chips:

  • Preheat oven to 350 degrees. Generously spray a 13 by 18-inch baking sheet with olive oil or avocado oil cooking spray.
  • Thinly slice 2 to 4 plain bagels into coins (you have to cut at a slight angle).
  • Spread bagel coins out in a single layer on baking sheet (you’ll have to use 2 sheets if using 4 bagels). 
  • Generously spray tops of bagel coins with cooking spray. Sprinkle lightly with salt. Bake in preheated oven about 12 to 15 minutes, turning once halfway through baking until slightly golden brown, and fully crisp.

Ingredients

For the Sumac Macerated Strawberries

  • ▢1 pound (450g) strawberries, hulled and sliced
  • ▢1 tablespoon citrus juice (lemon, lime, or orange)
  • ▢1 tablespoon sumac
  • ▢1 tablespoon granulated sugar

For the Olive Oil Shortcakes

  • ▢2 cups (240g) white whole wheat flour
  • ▢1 tablespoon baking powder
  • ▢2 tablespoons granulated sugar
  • ▢1/2 teaspoon kosher salt
  • ▢3/4 cup milk
  • ▢1/3 cup extra virgin olive oil
  • ▢1 teaspoon citrus zest (lemon, lime, or orange)
  • ▢1/2 teaspoon vanilla extract

For the Optional Egg Wash

  • ▢1 large egg
  • ▢1 tablespoon water
  • ▢Granulated or turbinado sugar, for sprinkling

For the Whipped Labneh

  • ▢2 cups labneh
  • ▢2 tablespoons granulated sugar
  • ▢1/2 teaspoon vanilla extract
  • ▢Fresh mint, finely minced, for garnish

Instructions 

  • Get ready: Preheat the oven to 450°F. Line a baking sheet with parchment paper.
  • Macerate the strawberries: In a mixing bowl, add the strawberries, citrus juice, sumac, and sugar. Stir to coat the strawberries evenly. Set aside at room temperature for at least 20 minutes to macerate (soften).
  • Mix the dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  • Mix the wet ingredients: In a medium mixing bowl, whisk together the milk, olive oil, zest, and vanilla.
  • Make the dough: Pour the milk mixture into the flour mixture. Mix with a spatula until just combined.
  • Bake: Use a cookie scoop or 2 spoons to drop the dough into 6 mounds spaced evenly on the prepared baking sheet.
  • Optionally, make an egg wash for better browning in the oven. Beat the egg and water in a small bowl. Use a pastry brush to brush the tops of the biscuits with a light coating of egg wash. Sprinkle the biscuits with granulated or turbinado sugar.
  • Bake the shortcakes. Bake until lightly golden, 12 to 15 minutes. Remove from the oven, then let the biscuits cool slightly on the pan.
  • Make the whipped labneh: While the biscuits are baking, make the whipped labneh. In a large bowl with a hand mixer, beat the labneh, sugar, and vanilla on medium speed until light and creamy, about 2 minutes.
  • Assemble and serve: Assemble the shortcakes warm or at room temperature. When the biscuits are cool enough to handle, halve them horizontally with a serrated knife. Add a generous scoop of macerated strawberries along with their juices on the bottom half of the biscuit. Add a dollop of whipped labneh and a sprinkling of mint. Sandwich it with the top half of the biscuit and serve.

Notes

  • Feel free to swap the strawberries with any berry of your choice, or a mixture. 
  • If you can’t find labneh easily and don’t have time to make it yourself, use Greek yogurt or skyr.
  • You can leave out the sumac for plain macerated strawberries, or substitute another spice. Many spices pair well with strawberries, such as 1/2 teaspoon ground cardamom, 1 teaspoon ground coriander, 1/2 teaspoon ground cinnamon, or 1/4 teaspoon freshly ground black pepper.
