Ingredients

  • ▢2 lbs white chocolate melts or almond bark
  • ▢21 oz semisweet chocolate chips
  • ▢14 oz milk chocolate chips
  • ▢13 ounces unsalted peanuts or dry roasted peanuts
  • ▢13 ounces salted peanuts

Instructions 

  • Line 1-2 large baking sheets with parchment paper (baking paper).

STOVE TOP:

  • Throw all of the chocolate into a heavy based pot or pan over low heat.
  • Cook while stirring occasionally until melted and smooth (about 10-15 minutes). Let cool for 5 minutes, then stir in nuts.
  • Use a cookie scoop or metal spoon to drop the mixture into rounds onto prepared baking sheets. Refrigerate until set (about 1 hour).

SLOW COOKER:

  • Spray a 6 quart (6 litre) slow cooker bowl with nonstick oil spray. Or use a liner. 
  • Throw in all of the ingredients, cover and cook on low for 1-2 hours or until chocolate is completely melted. (Stir occasionally — every 20-30 minutes or so — to avoid burning the chocolate on the bottom of the cooker bowl.)
  • Give the mixture a good stir to combine.
  • Use a cookie scoop or metal spoon to drop the mixture into rounds onto prepared baking sheets. Refrigerate until set (about 1 hour).

Notes

Refrigerate in an airtight container for up to 1 month, or freeze for up to 2 months.

Ingredients

  • ▢1 pound calamari rings
  • ▢1 cup whole milk
  • ▢1 tablespoon lemon juice
  • ▢1 ½ cups all-purpose flour
  • ▢¼ cup cornstarch
  • ▢½ teaspoon salt
  • ▢1 teaspoon dried dill
  • ▢½ teaspoon paprika
  • ▢½ teaspoon pepper
  • ▢vegetable oil for frying
  • ▢lemon wedges for serving

Instructions 

  • Prepare 1 pound calamari rings by thawing them if they are frozen. Pat the rings dry and place them into a bowl.
  • Pour 1 cup whole milk and l1 tablespoon lemon juice over the rings and stir to combine and coat the rings evenly in the milk mixture.
  • In a separate bowl whisk together 1 ½ cups all-purpose flour¼ cup cornstarch½ teaspoon salt1 teaspoon dried dill½ teaspoon paprika, and ½ teaspoon pepper. Remove the rings from the milk mixture, allowing excess liquid to drip off, and toss them in the flour mixture.
  • Place the breaded calamari rings onto a plate or sheet pan and prepare a second plate or sheet pan by lining it with paper towels.
  • Heat about an inch of vegetable oil for frying in a large skillet over medium-high heat. When the oil is hot carefully place the battered calamari into the hot oil and fry them for about 3 minutes until they are golden brown.
  • When the calamari is finished frying place them onto the paper towel-lined plate or sheet pan. Work in batches until all the calamari is finished and serve fresh with lemon wedges.

Notes

If you can’t find calamari rings, you can use squid tubes and cut them into rings. You can also use a mix with tentacles. 

To air fry, follow the steps up until you fry them. Instead, spray the breaded calamari with oil and place them into your air fryer basket. Air fry at 400 degrees Fahrenheit for 4-5 minutes.

Ingredients

  • 3 lb. fresh large strawberries
  • 2 cups semisweet chocolate chips
  • 2 tsp. coconut oil
  • 1 cup boiling water
  • 1 (3-oz.) box strawberry Jell-O
  • 1 cup vodka

Directions

Step 1

Slice off tops and tips of strawberries, leveling them so they can stand up on a flat surface. Using a small melon baller or ⅛- to ¼-tsp. measuring spoon, gently scoop out inside of each strawberry, creating a “shot glass,” being careful not to scoop all the way through. Discard insides.

Step 2

In a medium microwave-safe bowl, microwave chips and oil in 30-second increments, stirring between each, until melted and smooth, about 90 seconds total.

Step 3

Dip bottoms of strawberries into chocolate and arrange cup side up on a parchment-lined baking sheet. Refrigerate until hardened, about 10 minutes.

Step 4

Meanwhile, in a large bowl, whisk boiling water and Jell-O until dissolved. Add vodka and whisk to combine.

Step 5

Carefully divide Jell-O mixture among strawberry cups. Refrigerate until firm, at least 3 hours and up to 6.

Notes:

Better with vodka, but you should be able to make these with any type of liquor. Strawberry Jell-O is the obvious choice, but feel free to switch it up. Semisweet chocolate tastes the most classic, but dark or bittersweet should work too. The coconut oil might seem unnecessary, but we recommend not skipping it—it will help the chocolate melt more smoothly and set up nice and glossy.
