Moroccan Mint Tea

All around the world Moroccan mint tea is probably the most famous emblem of Morocco. Everyone knows about it and loves it, for Moroccans, mint tea is as important as earl grey is for the British and green tea is for the Chinese. They serve it at any time of the day with sweet and savoury foods; it’s kind of always tea o’clock in Morocco.

INGREDIENTS

  • 7 fresh mint sprigs cut in half so they can fit in the teapot and more for garnish 
  • 1 heaped teaspoon loose gunpowder tea (Chinese green tea leaves)
  • 500ml boiling water 
  • 3 tablespoons caster sugar

METHOD

• For this recipe, you will need a Moroccan teapot or a stovetop kettle. A stovetop kettle is a kettle you can safely place and use on your stovetop.

• In a clean pot, pour the gunpowder tea and half a cup of the boiled water. Let the tea simmer for a minute and pour out the water in a separate cup. If using a stovetop kettle, strain the water to keep the tealeaves inside the pot. Set this cup aside as it contains the essence of the tea. Don’t discard it.  

• Repeat the same process, pour half a cup of the boiled water in the same teapot but this time, swirl the teapot a couple of times to rinse to the tea leaves. If using a stovetop kettle, strain the water to keep the tealeaves inside the pot. Pour out the water and discard it.

• Now, insert the fresh mint, sugar and first cup of water you set aside earlier. Fill the teapot with the remaining boiled water and let gently simmer over medium-low heat until it comes to a boil. It’s important to let the tea slowly come to a boil to enable the gunpowder tea and fresh mint to steep properly. If you use a Moroccan teapot, you will see steam coming from the teapot when it’s boiling.

• When it comes to a boil, carefully open the teapot and with a large spoon, stir the tea to make sure that the sugar is well dissolved. Serve hot. if using a stovetop kettle, use a small strainer when pouring into each glass to retain the gunpowder tealeaves.

• If desired, place some fresh mint in each tea cup/glass to obtain a stronger fresh mint aroma and to decorate your tea cups/glasses.

Notes

• Moroccan mint tea is traditionally very sweet but feel free to adjust the quantity of sugar to your taste.

• Feel free to flavour your Moroccan tea with any other aromatic herb that you like such as verbena and geranium.

• You can find gunpowder tea in most Middle Eastern grocery shops.

Ingredients

  • 1/2 oz. fresh lemon juice, plus more for glasses
  • Granulated sugar, for glasses
  • 2 Tbsp. blueberry preserves
  • 10 oz. frozen lemonade
  • 2 cups ice cubes (about 8 oz.)
  • 5 oz. vodka
  • Lemon wheels and fresh blueberries, for garnish

Directions

Step 1

Squeeze some lemon juice into a small bowl. Place sugar on a plate. Dip rims of 2 glasses into lemon juice, then into sugar. In a small bowl, combine blueberry preserves and 1/2 oz. lemon juice.

Step 2

In a blender, blend frozen lemonade, ice, and vodka until smooth.

Step 3

Spoon 1 Tbsp. blueberry mixture into base of each prepared glass. Divide lemon drop between glasses, then spoon remaining blueberry mixture over top. Garnish with lemon wheels and fresh blueberries.

Cool down like an Italian with this icy frozen treat! You can use any seasonal fruit you’d like, or take a grown-up approach with freshly brewed coffee. Just be sure to adjust the sweetener to your taste—some fresh, ripe fruits are very sweet on their own, and may not require as much sweetener.

Ingredients

For a Fruit Granita

  • ▢4 cups finely chopped fruit of your choice (like watermelon, peaches, strawberries, mixed berries, or oranges)
  • ▢1 cup water (or combination of water and juice, see note)
  • ▢1/3 cup cane sugar
  • ▢Sliced fruit, for garnish (optional)

For a Coffee Granita

  • ▢2 cups brewed coffee
  • ▢1/2 cup cane sugar
  • ▢Coffee beans, for garnish (optional)

Instructions 

  • Blend and freeze. To make a fruit granita, combine the fruit, water, and sugar into a blender or food processor and blend 30 seconds until smooth. For a coffee granita, mix the brewed coffee with the sugar until the sugar is dissolved. Taste and adjust the sweetness to your liking. Pour the mixture into a rimmed sheet pan or baking dish that’s at least 8X12–inches. Place in the freezer for one hour.
  • Scrape. After an hour, use a metal fork like a rake, scraping through the mixture to break up the ice. Return to the freezer for another 30 minutes to an hour.
  • Repeat. Continue scraping with a fork through the mixture every 30 minutes to an hour until it is fully frozen and the granita has a fluffy granulated texture. This should take about 2 hours in total if you have a large sheet tray, or longer if you’re using a smaller baking dish.
  • Serve or store. Scrape into a pile and scoop into chilled serving glasses to serve immediately, or scrape into an airtight container and return to the freezer until you’re ready to serve.

Notes

  • For an extra tart fruit granita: Replace half of the water with freshly squeezed lemon juice. 
  • Make it boozy: Adding a splash of liquor (like Grand Marnier for an orange granita, or coffee liqueur for a coffee granita). 
  • To speed up the freezing process: Place your sheet pans or baking pans in the freezer for 30 minutes before you get started.
