Chicken and Red Plum Salad

Charred plums make this nutty salad a summer standout.

Ingredients:

4 6-oz boneless, skinless chicken breasts
2 tbsp. plus 1 tsp olive oil
1/4 tsp. salt
1/4 tsp. pepper
4 red plums, cut into 1-inch wedges)
2 scallions, thinly sliced
6 c. baby arugula
1/2 c. fresh dill, very roughly chopped
1/4 c. roasted almonds, chopped

Directions:

  1. Heat grill to medium. Rub the chicken with 1 teaspoon olive oil and season with 1/4 teaspoon each salt and pepper. In large bowl, toss red plums with 1 tablespoon oil and 1/4 teaspoon each salt and pepper.
  2. Grill chicken until cooked through, 5 to 7 minutes per side. Transfer to cutting board and let rest 5 minutes before slicing.
  3. Add plums to grill and cook until just charred, 2 to 3 minutes per side; return to bowl and toss with remaining 1 tablespoon oil and scallions.
  4. Add chicken (and any juices) to bowl, and toss to combine. Fold in arugula, dill, and almonds.

To make the *perfect* Cobb salad, you MUST use homemade dressing. And it’s so easy, there’s really no excuse. Just throw some red wine vinegar, Dijon mustard, and olive oil into a mason jar and shake it out. There’s no need to stress over the vinaigrette emulsifying—the mason jar does all the hard work.  

In terms of Cobb salad, you can take a lot of different routes. Our recipe is filled with crispy bacon, hard-boiled eggs, chicken breast, and creamy avocado. For the chicken, you can poach itgrill itbake it, or cook it in an Instant Pot. Or you can replace it with grilled steak or sautéed shrimp. Protein-wise, there’s a lot of room to play. But the blue cheese is kindaaaa nonnegotiable. 😉

INGREDIENTS:

1/3 c. red wine vinegar
1 tbsp. Dijon mustard
2/3 c. extra-virgin olive oil
Kosher salt
Freshly ground black pepper
1 head romaine lettuce, coarsely chopped
4 hard-boiled eggs, peeled and quartered
12 oz. cooked chicken, diced
8 slices bacon, cooked and crumbled
1 avocado, thinly sliced
4 oz. crumbled blue cheese
5 oz. cherry tomatoes, halved
2 tbsp. finely chopped chives

DIRECTIONS:

  1. In a jar, shake together vinegar, mustard, and oil and season with salt and pepper.
  2. On a large platter, spread out lettuce, then add rows of hard-boiled egg, chicken, bacon, avocado, blue cheese, and cherry tomatoes.
  3. Season with salt and pepper, drizzle with dressing, and garnish with chives.

Ingredients:

  • 1 loaf (14 ounces) ciabatta bread, cut into 1/2-inch cubes (about 10 cups)
  • 3/4 cup olive oil
  • 3 garlic cloves, minced
  • 1/4 teaspoon pepper
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon salt
  • 2 large tomatoes, chopped
  • 1/4 cup sliced olives
  • 1/3 cup coarsely chopped fresh basil
  • 2 tablespoons chopped fresh Italian parsley
  • 1/4 cup shredded Parmesan cheese

Directions:

  • Preheat oven to 350°. Place bread cubes in a large bowl. In another bowl, mix oil, garlic and pepper; drizzle 3 tablespoons over bread and toss to coat. Reserve remaining oil mixture. Spread in a single layer on two 15x10x1-in. baking pans.
  • Bake 12-18 minutes or until crisp and light brown, stirring occasionally.
  • Meanwhile, whisk vinegar and salt into reserved oil mixture. Add tomatoes, olives and herbs; toss to coat.
  • Cool bread cubes slightly. Add to tomato mixture; toss to combine. Sprinkle with cheese; serve immediately.
