Ingredients:

  1. 300 grams cooked salad shrimp, patted dry
  2. 1 green onion, thinly sliced
  3. 1 small celery rib, finely diced
  4. 1/3 cup grated carrot
  5. 1/3 cup light mayonnaise
  6. 1 Tbsp. fresh lemon juice
  7. Hot pepper sauce, such as Tobasco, to taste
  8. 1 tsp. chopped fresh tarragon or parsley
  9. Salt and white pepper to taste
  10. 4 cups baby mixed salad greens
  11. 8 (1/2) lemon slices
  12. 4 tarragon or parsley sprigs

Method:

Combine the first 9 ingredients in a bowl. Divide and set the salad greens into 4 martini or other decorative glasses. Divide and spoon the shrimp mixture on top of the lettuce. Garnish each cocktail with 2 lemon slices and a sprig of tarragon or parsley, and serve.

Recipe Options: Make curried shrimp salad cocktails by flavouring the shrimp mixture with 1/2 tsp. of curry powder. Make shrimp and crab salad cocktails by replacing half the shrimp with fresh Dungeness crabmeat. Fresh Dungeness crabmeat is available in our seafood department showcase.

Easy to Make A Shrimp Fried Rice

Ingredients:

  • Two tablespoons of canola or vegetable oil
  • Two tablespoons of sesame oil
  • ½ cup of frozen peas
  • Three carrots, peeled and diced
  • 1 pound of medium or large fresh shrimp, cleaned.
  • ½ cup of corn
  • ½ teaspoon of ginger
  • Three garlic, chopped or pressed
  • 3 eggs
  • Three green onion, peeled and thin sliced
  • Four tablespoons low-sodium soy sauce
  • ½ teaspoon of salt or to taste
  • ½ teaspoon fresh black pepper
  • 4 cups of cooked rice

Directions:

Prepare the large or medium size of frying pan. Add the sesame oil and shrimp. Cook over medium until high heat for about 3 minutes. Stir well. To make more delicious, don’t overcook the shrimp. Remove the shrimp from frying pan. Place on a plate and take aside.

2With the same frying pan, add the vegetable oil. Add the peas, corn, and carrots. Cook for about 2 minutes or until the vegetables begin to soften. Don’t forget to stir well. Then, add the garlic and ginger. Stir immediately for about 1 minute.

3Set aside the vegetables and add the eggs on frying pan immediately. Cook to scramble and stirring as necessary. Then, put back the vegetables. Add the fried shrimp that ready before, rice, green onions, and soy sauce. Stir to mixed all ingredients. Cook until the shrimp is beginning heat for about 2 minutes. Remove from the frying pan. Place onto the plate. If needed, eat with crackers. Your shrimp fried rice is ready. Yummy!

Southwestern-Style Shrimp Taco Salad

Cilantro, chipotle hot sauce, corn, black beans, and green onion lend fantastic south-of-the-border flavor to this shrimp-topped taco salad.

Ingredients:

1/4 cup fresh lime juice
2 tablespoons olive oil
1 teaspoon ground cumin
2 teaspoons minced garlic
2 teaspoons maple syrup
2 teaspoons chipotle hot sauce
3/4 pound medium shrimp, peeled and deveined
2 ears shucked corn Cooking spray
1 cup chopped romaine lettuce
1/2 cup chopped green onions
1/4 cup chopped fresh cilantro
1 (15-ounce) can black beans, rinsed and drained
3 plum tomatoes, chopped
2 ounces baked blue corn tortilla chips (about 1 1/2 cups)
1/3 cup light sour cream
1/4 cup diced peeled avocado Lime wedges (optional)

How to Make It:

Step 1:

Prepare grill to medium-high heat.

Step 2:

Combine lime juice, olive oil, cumin, garlic, syrup, and hot sauce in a small bowl, stirring with a whisk. Place the shrimp in a shallow bowl. Drizzle 1 tablespoon of the lime juice mixture over shrimp, tossing gently to coat. Reserve the remaining lime juice mixture; set aside. Thread shrimp onto metal skewers. Lightly coat corn with cooking spray. Place shrimp kebabs and corn on a grill rack coated with cooking spray. Grill 8 minutes, turning kebabs once and turning corn frequently until browned. Remove from grill; cool slightly.

Step 3:

Remove shrimp from skewers, and place in a large bowl. Cut kernels from ears of corn. Add corn, chopped lettuce, green onions, cilantro, black beans, and plum tomatoes to shrimp. Drizzle reserved lime juice mixture over the shrimp mixture, and toss gently to combine.

Step 4:

Divide tortilla chips evenly among 6 shallow bowls; top each serving with 1 cup shrimp mixture. Combine sour cream and diced avocado in a small bowl; mash with a fork until well blended. Top each serving with about 1 tablespoon sour cream mixture. Serve with a lime wedge, if desired.
