Feta Spinach Stuffed Chicken

Step 1.
Firstly, preheat the oven to 425 degrees F.

Step 2.
Using a sharp knife, slice a pocket into the sides of each chicken breast. Be careful to not cut all the way through but just enough to create space for the spinach mixture to go in.

Step 3.
Season both sides of the chicken breasts with some salt, paprika and garlic powder and set aside.

Step 4.
Now, in a medium bowl, combine the sun-dried tomatoes, spinach, feta cheese, shallots, garlic, basil, panko, oregano, parmesan cheese, salt and 1/2 tablespoon olive oil. Mix this well and set it aside.

Step 5.
Now, divide the spinach mixture between the chicken breasts and stuff it into each. You can stuff about ¾ cup in each chicken breast. If required, you can also use toothpicks to close the chicken breasts.

Step 6.
Place a large oven-safe skillet over medium heat. Add in the oil. Once the oil is well heated, sear the stuffed chicken for about 2 to 3 minutes on each side until they are well browned.

Step 7.
Transfer the skillet into the oven and bake for about 12 to 15 minutes until the chicken reaches 165 degrees F. Once cooked, tent with foil for 5 minutes.
