Rfissa – Fragrant chicken and lentils with papardelle

Rfissa is a traditional, celebratory Moroccan dish featuring stewed chicken, lentils, and a fragrant spice blend (often ras el-hanout) served over shredded msemmen (flaky pancakes), trid pastry, or bread. It is a cherished comfort food typically served at family gatherings or for new mothers, known for its rich broth and use of fenugreek seeds.

INGREDIENTS

  • 4 tablespoons olive oil
  • 4 large chicken legs
  • 3 large onions, sliced
  • 20g fresh coriander, finely chopped and more for garnish, if desired
  • 3 garlic cloves, peeled and crushed
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon ras el hanout
  • ¾ teaspoon salt, or more to taste
  • ¼ teaspoon ground black pepper
  • 1 pinch saffron threads
  • 200ml vegetable or chicken stock
  • 1 x 400g can green lentils, drained
  • 500g papardelle, cooked according the packaging 

METHOD

 • Heat 2 tablespoons of the olive oil in a large saucepan over a medium-high heat. Add the chicken legs (in batches if necessary), skin-side down, and sear for about 5 minutes until golden brown. Make sure that the oil is very hot before adding the chicken – you should hear a sizzle when the skin touches the pan, otherwise it isn’t hot enough. The skin will be released naturally from the chicken flesh once seared, so don’t be tempted to remove it beforehand. Transfer the seared chicken to a dish and set aside until you are ready to use it. 

 • Reduce the heat under the saucepan to medium and heat the remaining 2 tablespoons of  olive oil. Add the onions, cover the pan and leave to cook for about 10 to 15 minutes or until they are soft and translucent, stirring occasionally. Add the coriander, garlic, turmeric, ginger, ras el hanout, salt, pepper and saffron and cook for 5 minutes, stirring occasionally. Return all the chicken legs to the pan and pour in the stock. Bring to the boil over a high heat, then reduce the heat to medium-low, cover the pan and leave to simmer gently for 45 minutes or until the chicken is almost cooked, stirring occasionally. If it looks like there isn’t enough liquid in the pan at any point during the cooking process, add a couple of tablespoons of water.

• Once the chicken is cooked, remove it from the pan and if necessary and adjust the consistency of the onion sauce. The sauce needs to be pourable but not soup-like, if the sauce is too dry add a few tablespoon to the pan and if it’s too liquid, reduce the sauce for a few minutes. Taste the sauce and adjust the seasoning with salt if necessary.

• In a separate small saucepan, add in the lentils along with a ladle of the onion sauce and warm up over medium-low heat. Taste the sauce and adjust the seasoning with salt if necessary.

• While the lentils are warming up, return the chicken to the pan over low heat and cook your pasta according the packaging. I recommend eating the paste al dente. Drain the pasta and serve immediately with the chicken and lentils on top. Garnish with ground coriander, if desired.

Notes

  • Halfway through cooking, taste and adjust seasoning, particularly if topping off the liquids. You want the broth to be very flavorful.
  • Fenugreek imparts a traditional flavor to rfissa, but not everyone likes to bite into the cooked seeds. As noted in the directions, tying the seeds in a cheesecloth allows you to keep them separate from the main dish at serving time. Overnight soaking both softens them and reduces their pungency. 
  • Smen is a preserved, clarified butter that adds a distinctive flavor to traditional Moroccan dishes such as this one. It can be omitted without too much compromise, but its absence will be noted by those familiar with the dish.
  • Steaming is the traditional method of tenderizing and heating the shredded pastry or msemen (or stale bread), but you can use the microwave instead. Sprinkle a little water over the shredded pastry, cover and microwave until hot. The cover traps the steam and has the same effect as steaming. 
  • If your chicken cooks faster than the lentils, remove it from the broth and set aside, covered, to avoid it falling apart in the broth. Once the lentils are cooked, you can return the chicken to the pot to heat through for serving.
  • If serving the chicken whole rather than cut into pieces, you can remove it from the pot when nearly cooked and finish it by roasting in a 450° F (230° C) oven.

Instructions

Start preparing your cocktail by adding a few cubes of ice to the glass. In a cocktail shaker, combine the vodka, triple sec, lemon juice, simple syrup and a few cubes of ice.

Shake everything for 30 seconds, or until the cocktail shaker gets very cold!

Strain the liquid into the cocktail glass and top up with soda water. Serve immediately!

Notes

*To make a simple syrup, combine equal parts sugar and water and simmer in a small saucepan on the stove until the sugar is dissolved. Cool completely and store at room temperature for a couple of weeks.

*For extra lemon oomph, use lemon soda water, or better yet, lemon vodka AND lemon soda water!

Instructions

For the scones

  • Line a sheet pan with parchment paper. In a medium bowl or liquid measuring cup, whisk together the mashed bananas, heavy cream, egg, and vanilla. Refrigerate until ready to use.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  • Add the butter to the dry ingredients, and use a pastry cutter to cut in the butter until the flour-coated pieces are the size of peas. Add the refrigerated wet ingredients and fold with a spatula until just combined.
  • Transfer the dough to a generously floured surface and knead ten to twelve times, until it comes together, adding a little flour as necessary (the dough will be sticky). Pat the dough into a square and roll it into a 12 in [30.5 cm] square, dusting with flour as necessary. Fold the dough into thirds, like a business letter. Fold the dough in thirds again by folding in the short ends, making a square. Transfer it to the prepared sheet pan and put it in the freezer for 10 minutes.
  • Return the dough to the floured surface, shape it into a 12 in [30.5 cm] square, and fold the dough in thirds again. Turn over the dough, so it’s seam-side down, and gently roll out the dough into a 12 by 4 in [30.5 by 10 cm] rectangle.
  • With a sharp knife or bench scraper, cut the dough crosswise in to four equal rectangles, then cut each rectangle diagonally into two triangles, for a total of eight scones. Transfer the triangles to prepared sheet pan. Freeze the scones for 30 minutes, or up to two weeks.
  • When ready to bake, position an oven rack to the middle of the oven and preheat the oven to 375F [190C].
  • Brush the tops of the scones with a little heavy cream, making sure it doesn’t drip down the sides. Place another sheet pan under the scones, so the pans are double-stacked (this helps prevent the bottoms of scones from browning too quickly). Bake the scones, rotating the stacked pans halfway through, until the tops and bottoms are light golden brown, 18 to 25 minutes. Transfer the top sheet pan to a wire rack and let the scones cool slightly.

For the toasted sesame icing

  • While the scones are baking, in a small bowl, whisk together the melted butter, toasted sesame oil, vanilla, and salt. Add the confectioners’ sugar and mix together, then whisk until well combined and smooth. If needed, add water, 1 tablespoon at a time, to reach the desired consistency. Use the back of a spoon to top each scone with the icing, then sprinkle with sesame seeds. The icing sets quick, so sprinkle the seeds right after icing each scone.
  • Scones are best eaten the same day they are made.

Notes

For a stronger sesame flavor, use 2 teaspoons of toasted sesame oil but start with 1/2 teaspoon, taste, and adjust as needed
