The greatest cornbread covered with maple syrup is how this thick, sweet corn and maple ice cream tastes. Add a little chile lime spice for a salty and exciting variation. Chilling the base completely before adding it to the ice cream maker is the key to perfectly textured ice cream. The maize kernel skins will be removed if the base is strained through a sieve, so don’t neglect this step.
INGREDIENTS
- 3 cups fresh raw corn kernels
- 1 cup whole milk
- 2 cups heavy whipping cream
- 1/2 cup sugar
- 1/2 cup pure maple syrup
- 1/2 teaspoon salt
- 4 large egg yolks
- 1 teaspoon pure vanilla extract
- Fresh black raspberries or blackberries for serving
- Chile lime seasoning or Tajin Classic Chile Lime seasoning, optional for serving
Sweet Corn and Maple Ice-Cream Direction
1) In a blender, puree 1 1/2 cups corn kernels and 1/2 cup whole milk until extremely smooth. Move to a heavy, deep saucepan. Continue with the remaining 1/2 cup milk and 1 1/2 cups corn.
2) Add to the corn mixture 2 cups heavy whipping cream, 1/2 cup sugar, 1/2 cup maple syrup, and 1/2 teaspoon salt. Heat to a simmer over medium heat.
3) In the interim, place a big bowl on top of a bigger bowl of ice. Put a sieve with mesh in the big basin.
4) In a small dish, whisk together 4 egg yolks.
5) Gently warm the egg yolks by slowly adding a cup of the cooked corn mixture into each one. After that, whisk the egg yolk mixture back into the corn mixture that is simmering, and cook for two or three minutes on very low heat, or until it thickens. Avoid boiling.
6) Pour the mixture through the sieve into the bowl that is placed over the ice as soon as possible. To halt the cooking process and chill the mixture, whisk. Add one teaspoon of vanilla and stir. For up to two days, or until very cold, refrigerate the corn combination.
7) As directed by the manufacturer, pour the chilled corn mixture into your ice cream maker and freeze. Transfer to a container. For at least an hour, cover and freeze completely.
8) Present little portions of the berry-topped ice cream. Shake some chili-lime seasoning over the ice cream if you’d like.
