How to Make an Easy Roasted Chicken

Ingredients:

  • 3-pound whole chicken
  • 4 tablespoons melted butter or oil
  • 4 cloves minced garlic
  • 3 teaspoons salt (1tsp for seasoning; 2 tsp to rub inside the chicken cavity)
  • 1 teaspoon fresh ground black pepper
  • 2 teaspoons chili powder
  • 2 fresh rosemary sprigs
  • ¾ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano      
  • 1 teaspoon lemon juice
  • 3 cloves peeled garlic
  • 2 lemons, sliced half

Instructions:

  • Take a whole, broiler-fryer chicken and empty the chicken cavity.
  • Dry the chicken surface thoroughly with paper towels. The dryness will add to the crisp of the chicken surface and keep the meat tender.
  • Rub the inside of the chicken cavity with 2 teaspoons of salt.
  • Place the chicken vertically on a shallow roasting pan with the breast side upwards.
  • Mix the melted butter and minced garlic and brush it generously on the chicken. You can substitute butter with oil.
  • Thoroughly rub any leftover minced garlic.
  • Prepare the roasted chicken seasoning by mixing 1 teaspoon of salt, 1 teaspoon of fresh ground black pepper, 2 teaspoons chili powder, ¾ teaspoon dried basil, ½ teaspoon dried thyme, ½ teaspoon dried oregano, and 1 teaspoon of lemon juice. Rub the seasoning on the erected chicken.
  • Place the chicken horizontally on a roasting pan and fill the cavity with 3 cloves of garlic, 2 fresh rosemary sprigs, and 2 lemons sliced into half. These will make the roasted chicken more aromatic and give extra flavor. Avoid stuffing the cavity with too many ingredients.
  • Tuck the wings under the body and tie the chicken legs together.
  • Preheat the oven at 400 F or 205C.
  • Bake the roast at 400 F for 15 minutes, then lower the heat to 375 F or 190 C.
  • It will take one hour or one and a half hours to cook the chicken until it is ready to serve.

Creamy White Bean and Spinach Quesadillas

Having a tight schedule will want you to skip your meals. In that case, these creamy white bean and spinach quesadillas can be your savior. Quesadillas are Mexican in origin with tortillas filled with cream and leafy vegetables. They take 20 minutes and make a fulfilling meal. The creamy texture will swoon your taste buds into a dreamy dance. The hints of garlic, cumin, and coriander make it worth more.

A happy Sunday brunch or a quick appetizer to your course meal: these creamy white bean and spinach quesadillas will do wonders. These are the new mac n cheese, only better and even more mouth-watering.

Ingredients:

  • 1 15 oz Can (approx. 425 g) Cannellini beans/ White Kidney beans/ White navy beans 
  • 3 cups Fresh Spinach
  • 5 oz (approx. 150 g) Shredded Jack Cheese
  • ½ cup Sour Cream 
  • 4 tbsp Olive Oil
  • ½ tsp Salt
  • ¾ tsp Chili powder
  • ¼ tsp Garlic powder
  • ¼ tsp Coriander powder
  • ¼ tsp Cumin powder
  • 5 Corn/Flour Tortillas (8-12 inches)
  • Chopped cilantro for garnish
  • Some sour cream or teriyaki sauce to use as a dip

Instructions:

  • Drain the white beans and rinse them thoroughly with water. In case of uncooked beans, soak them in water overnight and boil them the next day. Repeat the rinse and drain procedure as done with canned beans. We prefer cannellini beans because of their sturdy texture. For mashed filling of quesadillas, white kidney beans are the preference.
  • Add salt and chili powder to the rinsed white beans. Mix it well, add the remaining spices to the beans and keep it aside. 
  • Optional: If you do like more spicy food, you can add taco-hot sauce too.
  • Rinse the spinach and roughly chop it. Combine it with cheese and sour cream in a separate bowl till a creamy texture form.
  • Note: If you do not have any sour cream at hand, Greek yogurt can work fine too. Also, if you are using canned spinach, approx. 2 cups of it, make sure to thaw it first. 
  • Add spiced white beans to the spinach mixture and give them a twirl. Do not overmix to avoid mashing the beans. 
  • Take 5 tortillas and divide the mixture equally. Fold the tortillas into half and gently press their ends to avoid spilling. 
  • Prepare a griddle or skillet by adding 2 tbsp of olive oil and brushing the whole surface with it at medium-low heat. Cook 2 tortillas for 1 to 3 minutes each side, till both sides are golden brown and crispy.
  • Repeat the process with the other three tortillas with adding 2 tbsp of additional olive oil. Flip the sides till they are crispy and golden. If you like dry heating, then you can skip the oil totally but can be done in a non-stick pan.
  • Dish out the creamy white bean and spinach quesadillas. Cut them in half, garnish with some cilantro and serve with sour cream or teriyaki sauce. Voila! Your creamy white bean quesadillas are ready.

  • One pound of shrimp

Directions to follow

Once you are ready with the ingredients, follow these steps for preparation.

  • You should take a large skillet and heat that up in medium to high heat. You should also melt the butter in it. Then you can add garlic and dry that. You should then add shrimp and fry for two additional minutes. Make sure that they are cooked well until they give out the pink color. Once you get that, you can take another bowl and transfer.
  • Now take the onions and fry them. You can use the same skillet. It is possible for you to add white wine based on your preferences. In the meantime, you should keep on scraping off the bits that are stick to the bottom of the pan. You should also add dried tomatoes and keep on frying for two additional minutes, so that you can get their flavors.
  • Now you can reduce the heat. You can add half and half now and get that to a gentle simmer. Keep on stirring occasionally. Depending on your preferences, season with pepper and salt.
  • You can also add spinach leaves into the mix and keep that to wilt in the sauce. Then you should be adding parmesan cheese. You should keep the sauce to simmer for one extra minute, so that cheese would melt through your sauce.
  • Now you can add your shrimp back into the pan. This is where you can sprinkle parsley and herbs. Make sure that you stir that thoroughly as well.

Now you are done with preparing Shrimp in Cream Sauce. Make sure that you serve that on top of any food you like. It can be rice, pasta, or steamed vegetables.
