Spaghetti Squash

Spaghetti squash can be cooked in a many way. Popular ways of preparing this vegetable are baking, boiling, steaming, or microwaving. It can be served with or without sauce as an alternative for pasta.
In this recipe you will learn how to make spaghetti squash with alfredo sauce. This vegan, grain-free version derived by the American adaptation of concepts and flavors. Spaghetti squash alfredo makes an outstanding alternative to traditional alfredo pasta. Oven baked spaghetti squash coated in rich and creamy alfredo sauce can be served as lunch or dinner for any occasion.

This recipe is for 4 servings, you can adjust the quantity as per your requirement.

INGREDIENTS
For the Roasted squash;

For the Alfredo sauce;

ii)Minced garlic2 cloves
iii)Heavy cream1 cup
iv)Italian seasoning½ teaspoon
v)Salt¼ teaspoon
vi)Pepper¼ teaspoon
vii)Grated Parmesan cheese1½ cups

DIRECTIONS

Roasting the spaghetti squash;

Step 1.To prepare the oven, preheat it to a temperature of 425 degrees. Take a baking sheet, line it with a baking paper and set aside.

Step 2.
To prepare the spaghetti squash, slice the squash in half length-wise. Remove all the innards and seeds. (You can set aside the seeds to roast them and make a delicious snack). Once the insides of the spaghetti squash are cleaned, brush the inside with olive oil. Sprinkle salt and pepper on top and place them on the baking sheet you set aside with their open side facing downwards.
Bake the squash in the oven for approximately 30-40 minutes. The cooking time depends upon the size of the spaghetti squash.

Step 3.
Once the squash is cooked properly (The spaghetti squash is ready when you can easily pull the squash with a fork), allow it to cool for some time. Then, gently pull away the strands from the skin using a fork.Set this aside on a plate.

Preparing the alfredo sauce;

Step 1.
Place a sauté pan over a medium heat and add butter. Once the butter is melted, sauté the garlic for 1 minute. After that add the heavy cream, salt, pepper, Italian seasoning and stir well.
Keep stirring while cooking until the sauce thickens a bit. This should be for about 2 minutes on the medium flame.

Step 2.
Remove the sauce from the heat. Add the spaghetti squash strands to the sauce and stir well.
Your spaghetti squash alfredo is ready to be served immediately.
