Pesarattu | Moong Dal Dosa

Ingredients:

For Pesarattu Batter

  • 2 cups green moong beans2 cups green moong beans
  • 1 green chilly – chopped1 green chilly – chopped
  • ½ inch ginger – chopped½ inch ginger – chopped
  • 1 pinch asafoetida (hing) – optional1 pinch asafoetida (hing) – optional
  • ¼ cup chopped coriander leaves – optional¼ cup chopped coriander leaves – optional

Toppings And Other Ingredients For Pesarattu

  • 1 medium-sized onion – finely chopped1 medium-sized onion – finely chopped

Instructions:

Making Pesarattu Batter

  • Firstly, pick and rinse the moong beans.
  • Then soak the moong beans overnight in enough water. 
  • Drain and add the moong beans along with ginger, green chilies, asafoetida, coriander leaves and salt in a grinder jar. 
  • Add some water and grind into a smooth batter. 
  • Remove the batter in a bowl or pan.
  • Stir in the rice flour and mix well. The consistency should be similar to a dosa batter. 

Making Pesarattu

  • On a griddle or flat pan, spread a little oil or ghee.
  • With a ladle, pour the dosa batter on the griddle and use the same spoon for spreading the moong dal dosa batter into a round shape.
  • Pour some oil on the sides and in the center of the dosa.
  • Sprinkle the finely chopped onions, green chilies and coriander leaves.
  • Press these with the spatula so that they get stuck to the batter which is getting cooked.
  • Flip and cook both sides a couple of times till crisp and browned.
  • Serve the moong dal dosa or pesarattu hot with upma and coconut chutney.

Ingredients:

12 large eggs
4 ounces Monterey Jack cheese, shredded (about 1 cup)
1/2 cup whole milk
1/2 teaspoon table salt
1/4 teaspoon black pepper
1 (32-oz.) package frozen Tater Tots
4 ounces sharp Cheddar cheese, shredded (about 1 cup)
6 thick-cut smoked bacon slices, cooked and crumbled

How to Make It:

Step 1

Preheat oven to 350°F. Whisk together eggs, Monterey Jack cheese, milk, salt, and pepper in a large bowl. Arrange Tater Tots in an even layer in a lightly greased (with cooking spray) 13- x 9-inch baking dish. Pour egg mixture evenly over Tater Tots. Top evenly with Cheddar cheese.

Step 2

Bake in preheated oven until set and cheese is golden brown, 40 to 45 minutes. Let stand 10 minutes. Sprinkle with crumbled bacon.

Easy Overnight French Toast Casserole

INGREDIENTS:

For the French Toast Casserole

  • 1 tablespoon butter
  • 16 ounces bread (French Bread, Italian Bread, Whole Wheat Bread) cut into 1 inch cubes (this is about 8-10 loosely packed cups)
  • 2 cups milk (or 1 cups milk and 1 cup half and half)
  • 6 eggs
  • 1/4 cup maple syrup
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 2 teaspoons vanilla extract

Vanilla Glaze (optional)

  • 1 cup powdered sugar sifted
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • dash of salt

INSTRUCTIONS:

  • Cube up bread into 1 inch cubes. If time permits, spread the bread out on baking sheets and let dry out for several hours. If time does not permit, dry bread out in a 300 degree oven for 15-20 minutes.
  • Grease a 9×13 baking dish with 1 tablespoon butter.
  • Place cubed bread in prepared casserole dish.
  • Mix together eggs, maple syrup, milk, vanilla, salt, cinnamon and nutmeg. 
  • Pour custard over bread, lightly tapping bread down to be fully sumberged in custard. 
  • Cover casserole with plastic wrap and refridgerate for 8 hours or overnight. 
  • To Bake, preheat oven to 350 degrees. Remove plastic wrap and cover with foil. Bake covered for 30 minutes. Remove foil and bake for additional 15 minutes. Serve warm with glaze and/or additional maple syrup.
